    So, I am alumni. I was excited to come visit my alma mater. It's a great campus and the little cafe was lovely. The tour was very short but I'm glad I stopped in to visit.

    It has been a lifetime bucket list of mine to attend a cooking class at Le Cordon Bleu in Paris and now I can cross it off my list. A little on the expensive side, the cooking class is worth every penny. I attended a pastry baking class and it was extensive and lasted about six hours long. The class is very serious and treats each student like they are a chef in training. The class is taught by a chef who speaks in french, but there is an English translator. What I love about this class is that students do not have to be paired up and each student has their own station. We made plain and chocolate croissants, and about three different kinds of brioche. At the end of class, you get to take home all of your creations - which was a lot! I am proud to say that the best chocolate croissant I ever ate was the one I made myself at Le Cordon Bleu. A commemorative apron and dish towel is included, as well as a certificate and photo with the chef. It was a once-in-a-lifetime opportunity for any foodie.

Luc was our guide and chef, and did a really great job. We enjoyed shopping for ingredients at the market just a few blocks away from the Le Foodist kitchen. Once back to the kitchen, Luc gave us the run down of what we would be making. Instructions were clear, and we all worked together to put a 3 course lunch together. I even learned a few cool new techniques such as a simple "sous vide" by tightly wrapping chicken in plastic wrap and cooking in hot water. Fun, educational and delicious. The process was so easy and friendly from start to finish - booking with Fred was prompt and very accommodating, and Chef Stefane welcomed us in making us feel like we were visiting a friend in Paris. The facility was clean and beautifully appointed (and air conditioned!), making a comfortable experience. All 4 of us enjoyed the process, learned so much, and loved the tea while we sampled our finished product. We took the extras with us - what a treat for days! In addition, Stefane went above and beyond to help us plan our remaining days in Paris - we were so grateful for his kindness and local knowledge! Highly recommend, and we will definitely be back when we visit again!

The class was held in French and i was the only student who did not speak it so they gave me an interpreter who professionally translated everything our teacher was saying. Speaking of the teacher, he was very friendly, engaging and skilled . Their kitchen is huge and really well equipped. Our class i think lasted about three hours and it was pure joy. We made two kinds of very tasty ice-cream. The process was rather complicated but it was very well explained, not rushed and it was just fun. We also made meringue, sauce and some edible decor to go with the ice-cream. Of course at the end of the class we ate our creations. It tasted really good. Never are you in such a position to cook this way yet I was able to bring lessons home to our own kitchen. The day started with meeting the concierge who guided us 'behind closed doors' and into the depths of the Ritz. Surprisingly, the back of house is quite nice and took me by surprise. We met our two chefs in a good size room adjacent to the main kitchen. The lesson room included a full kitchen, a large prep table, selves full of dry goods and china, and a large dinning table. From the first moment we started preparing courses and learning about every step. Wine and small dishes (we prepared) were served throughout the day. Finally, my group and our two chefs sat down for a lovely meal and interesting conversation (in English). A great experience.
