Great happy hour. Unassuming exterior - the inside is amazing - hence hidden gem. My only complaint is the music inside - way too loud, way too annoying. But the back patio is perfect.

For appetizers we chose Elote corn and Queso Fondido. The corn was outstanding. I expected the cheese to be more textured with bits of chorizo, but instead it was creamy, almost béchamel-like, and maybe the chorizo was just in the spicy accompanying sauce? I wasn't a huge fan but my friend was. Then came the entrees. Wow! Beef short rib was the highlight of the meal for me, melt-in-your-mouth tender and served with a super tasty sauce and some greens to lighten the dish. Puerto adobado was an enormous pork shank served with rice, beans, and pickled vegetables, also very tasty. Portions were generous. My friend and I both had to get to-go boxes for our leftovers. We tried the two desserts offered: churros and a cheesecake with berry sauce. I'm generally not a cheesecake fan, but warmed up to this one because of its light texture, almost soufflé-like, and the super-flavorful berry sauce. Churros were hot and crispy, accompanied by hot drinking chocolate for dipping, and more thick, creamy dulce de leche than we could possibly eat. I'm not a big drinker, so I appreciated that they have a fun selection of non-alcoholic cocktails. I had one that came rimmed with Tajin and containing a pineapple popsicle that melted and became part of the drink. Fruity, fun, a little spicy, and moderately priced. Besides the delicious food--at reasonable prices, especially considering the size of the portions, we were impressed by the friendly, helpful staff. The atmosphere is light and pleasant with plenty of windows, interesting art, and comfy seating. You'd have to think hard to picture the space in its original form as a Hardee's...but then again, the owners built their reputation for great food starting in a gas station. The restaurant is easy to get to, with ample parking.

"Contemporary American" was the vibe, lights were low, lots of wood/black pipe. Staff was exceptionally attentive, including our server (terribly remiss to have forgotten her name, but she was absolutely perfect and we enjoyed sharing some conversation with her as well). Proper Smashburger (8/10). I got mine with the caramelized onions (how can one not?) and it was perfect. Great bun-to-meat ratio, bun was not overly starchy or dry. Lettuce was fresh, onions were bangin, and the garlic aioli tied it all together. Sweet vinegar pickles were a nice touch. Togarashu Fries (8/10). Fresh cut skinny fries topped with a spicy seasoning that sneaks up on you. Served w/ a yuzu miso mayo for dipping that gave it just enough tang and paired well w/ the spicy. Truffle Fries (10/10). Fresh cut skinny fries topped w/ fresh grated and some diced chives. Served w/ a garlic (?) aioli that was top notch. Absolutely fantastic side.

All were friendly and professional. Inside they had numerous tables and a couple of booths. The bar portion also seemed to be a good size. They had a few televisions throughout. They also have a touch tunes music player. The service was fast and accurate! The menu is a la carte. My sister, daughter and I all had burgers and fries while my wife ordered chicken wings. The burgers are made to order. On mine I had added bacon, cheese and an egg. It was delicious. The fries were also good. My sister and my daughter also liked their food. My wife really enjoyed her chicken wings. She told me that they were good and spicy. She also said, "it has been a while since I have had good wings." If you are in Stillwater Minnesota or visiting, I highly recommend stopping here!

It wasn't all that busy, roughly three staff members in and out behind the bar inclusive of an employee who was working on a sangria mix? Pre made cocktail mix? Not sure but he was putting something together the majority of the time I was in. I digress. It wasn't just myself and guest who experienced the slow service, there was another group at the end of the bar that had to ask multiple times for their tab to multiple employees. On to the food: -I went with the Royale Smash Burger, which was quite tasty and honestly, the seasoning of the burger and the cheese stood so strong on their own I wish I didn't have the tomato and pickles in hindsight. Really great burger! -the side fries were solid and seasoned perfectly! -the onion rings we split was surprisingly the opposite. No real taste to the batter, came out not super hot, and really soggy. The exact opposite of the side fries and honestly, wish we'd skipped on them. Overall, the service kind of killed the experience, the burger was solid, and I'd skip the onion rings. There's some decent spots in Stillwater and this place always seems super busy this was the first chance I had to stop in and... not sure with the other options I'd jump to go back. Perhaps it was just an off service/off afternoon?

The menu wasn't accurate, they were understaffed so the service was a little random. Good chicken wings, I had a Thai chicken wrap appetizer that was soupy and too sweet. My wife had a hamburger ("pink or no pink" - she asked for pink) and got a grey, dried out patty. Why ask if you can't cook it anyway? A fine dinner for $60, but it was twice that with drinks. I don't think we'll be back. Not horrible, there are just so many other options in downtown Stillwater.

The exposed stone walls and that huge wall of whiskey bottles behind the bar give the place a cozy, speakeasy kind of feel. I had to try their take on an Old Fashioned, and it did not disappoint. It came loaded with a giant orange peel and topped with a couple thick strips of crispy bacon and a piece of what I'm pretty sure was a bacon-waffle garnish - such a fun, over-the-top touch that actually worked with the drink instead of feeling gimmicky. The bourbon itself was smooth with just the right amount of sweetness, and the smoky bacon on top added a savory contrast that made it way more interesting than your typical Old Fashioned. The bartender clearly knew the menu well and was happy to chat through the whiskey selection, which made the whole experience feel personal rather than rushed. Great spot if you're looking for a laid-back bar with a serious cocktail program and a little bit of playful flair. Already looking forward to going back and working through the rest of their drink menu.

There's really no redeeming value to be associated with this place other than it being a cool place to have a beer during the hot summer months. And downright freezing during the winter! Me finding myself tethered to John (a local gadabout) who drags me to a seemingly endless line of beverage intakes of an alcohol nature, and I not being use to the effects of cold and ice. The ice in the parking lot can be treacherous, and the inside is like aging beef in cold storage! Ahhh but that only adds to its charm. Tie that in with the warm hearts sharing the bar and it makes for a memorable experience. But not one that I would frequent on a daily basis. I heard stories about there being caves associated with Nova. Who knows, maybe someday John will get me an invite to explore and I'll come across Injun' Joe just like Tom Sawyer. My luck though it'll be a rabid bat I find. A memory ever associated with the bowels of the dive which is Nova. Honestly speaking, I had fun at Nova, cold and all. We would have stayed longer but alas, a dinner engagement loomed which would provide us the opportunity to indulge once more, and more importantly, thaw out! Quick Tip: After you've had your fill at Nova you can walk down to the corner for ice cream at the Dairy Queen. You'll find that novelty warmer than what you had to endure at Hudsons finest dive.
