The flaky brown and tan biscuits were the first plate we tried with our homemade strawberry jam and cream cheese. I tasted mine plain at first to get a sense of the composition. The resounding taste of butter in the near bread told me of the quality was on par with any I had enjoyed before. Biscuits are not difficult to make, but doing so consistently is important. Then we tasted the dark brown gingerbread pigs, known as "puerquitos", which were gloriously fresh with a dusting of confectionery sugar. I was impressed again and the subtle taste of piloncillo found its way into every taste.
