Believe it or not, I was actually looking forward to a long layover at Amsterdam's Schiphol Airport. Jamie W. and I just got off our redeye flight from San Francisco, and I just appreciate a terminal that goes on forever since the airport consists of one long terminal. We had four hours to kill, so we took our time finding a morning meal to tie us over to the next in-flight snack box. This marketplace set-up was just the ideal find for us up on the mezzanine level because we were committed to eating healthy on our vacation even with paella and grilled octopus waiting for us in Barcelona. Most of the grilled vegetables still had not found their way to the display platters (photo: http://bit.ly/2G3GwoD). I decided to wait for the staff to get the plates ready rather than weaken and get a big bowl of Asian noodles at the next station. For 6.95€, I was able to get a pretty hefty plate of grilled zucchini and eggplant, roasted red peppers, and black olives (photo: http://bit.ly/2DlAsWv). It was on the lukewarm side but frankly hit the spot when we were at our least demanding. There was quite a food court up there, so seating was fairly packed with fellow passengers speaking in a multitude of languages (photo: http://bit.ly/2mZ2ccN). Now it was time to catch a few winks before our Barcelona adventure.
