The graduating levels of texture from the celery to fennel to peas to risotto to fish was impressive. The cilantro was an unexpected bite of delight. Dessert was blackberry sorbet over pineapple carpaccio with a refreshing delicate lemon sauce. Chef Karl adds deft delicate touches of unexpected delight and detail to the classic fare. We got duck confit, cassoulet, which this region is known for, steak frites (entrecôte) and filet mignon. I never get filet mignon because I think it might be dry. My wife wanted it; this was juicy and served as a reminder that the French are justly proud of their meat. The frites were superb. All of the food was very hearty, filling and tasted good. The people there were nice. I want to come back here, and go to Le Saint Maurice.
