I also loved the experience of watching Jesus the owner and his chefs making the 2 big paellas , as my paella pans are smaller and -in my experience-it is really tricky to make them so big. Jesus and his team are also extremely organized and efficient. Their process was well thought out, from how the team kept the paellas warm to how they packed the left overs.
