Aledaña never disappoints. Went with a friend, she went with their most popular ramen, the Tonkotsu, with pork, and she loved it. My favorite is the spicy miso, which I get with tofu. I LOVE their tofu! The day we went, they had a special on the mochi ice cream, and the staff recommended the strawberry and mango, and they were delicious. Staff is super friendly, ready to make recommendations, and the food is always beautifully presented. We are Southern Californians and had been on a cross-country roadtrip for almost 3 weeks. El Paso was one of our last stops on the way and we searched for Guy Fieri's visited restaurant list and found Kaemada. We had wonderful meals of BBQ, Southern, American and Mexican food but we started to miss our Ramen meals back home. This place was great. Ot had a youthful, edgy vibe with cozy and nice colorful decor. We ordered the Thicc Boi and Birria Ramen, and ordered sides of the Thai Peanut Cucumber Salad, and Pork buns. The salad was a nice appetizer. We wished we had this back home. The dressing tasted peanutty with black sesame seeds and a nice acid balance. Kaemada's Ramen has El Paso influences. The broth had full bodied flavor, the meat was cut thicker with grilled char! Please also try the Birrea Ramen! We eat Birria broth and tacos at home and this ramen bowl was a great marriage of the 2 dishes. The thick cut and grilled char feature was also included in the pork bun. It was so tasty and satisfying with the thick pork cut, which I often thought was too thin anyways in the original version. They took the best El Paso meat flavor and Japanese presentation influences to make Kaemada's dish unique and their own. Don't expect the delicate and refined dashi broth Japan has. Be open to the bold flavors of the pork and broth. Expect a Southwest and Japanese fusion of robust and evolved flavors. Personally, I like firm noodles so request it cooked this way. Izzy, our server was friendly and attentive. She made our meal there more pleasant. Don't forget to order the Yuzu Cheesecake, light and not so sweet with a strong presence of Yuzu. Came across Kaedama on IG and just HAD to try it cause of the name. I read reviews prior to coming so I knew it was a smaller joint, and the reviews definitely are correct. The restaurant is a cute, small little spot close to downtown El Paso. Parking is free if you can find a spot along the street in front of the restaurant. If not then there is street parking around the corner but you will have to pay, which was the case for us. Kaedama is a snug little restaurant, inside they have a decent amount of table. Unfortunately we came right when they opened so they were packed for lunch. Only option for seating was in their outdoor patio. Not too bad since the weather was a bit cooler than normal for El Paso. Our waiter was quick to get our drink and food order. He also came around a couple times to check on us so no complaints there. I ordered the pork buns for appetizer and the hot babe for ramen. My husband tried the thicc boi ramen, which I'm assuming is one of their popular items since I heard at least 2 other tables ordering it as well. The pork buns were good! They season the pork very well, the sauce is very soy sauce heavy and you can taste the sodium right off the bat. As for the ramen, I'd definitely try their tonkotsu next time. I should have read the menu better, then I would have realize the broth is a soy sauce broth. I usually prefer a more creamy broth. But that's on me for not reading better. Overall I'd say the hot babe is good though. I got level two spice and it was perfect! Not too spicy but not too mild either. I'd give this place a solid 4 stars. It is a bit cramped both inside and out. The pork buns and ramen definitely had a strong soy sauce punch to both. I love that the meat in both the buns and ramen were seasoned heavily. Visiting El Paso and wanted to try this place out. Boy oh boy they did not disappoint! This is by far one of the best Ramen spots I've ever had. They had double portions of the meat, green onions, and even came with three additional Gyoza. The broth was very flavorful and came out nice and hot. I asked for garlic chili oil on the side which kicked the flavor up a notch. The inside is very small, but they do offer outside seating that is covered and shaded. Note: Kind of a self proclaimed ramen snob from years of eating great Ramen living in Los Angeles (as well as eating fantastic Ramen in Japan). Bottom line: Kaedama means "more noodles" - don't even try one noodle. To get a seat is a 30 minute wait - once you get a seat it takes another 20minutes for the water to saunter by to ask if yould like something to drink - the menu is limited - we just gave him our entire order. This Ramen shop was not worth the wait- bowel had overcooked noodles, little brothe that had poor dashi. The tonkatsu had a chunk of pork belly that was so thick, hard and overcooked with burnt char that ruined the flavor of any/everything in the bowl. The boiled egg was not appetizing and so small and poorly cooked that it was almost unrecognizable. Unfortunately ordered side of pork tips and pork belly thinking they would be delicious and melt in your mouth - hardly! This cook must have been from Famous Dave's since this meat was BBq style and overcooked with a black burnt char, hard as a rock and had a Smokey BBQ sauce that was not Japanese at all. Sadly ordered pork goyzas appetizer - again Chernobyl style and fried beyond recognition with little taste. Don't even try the sushi appetizer - just awful, a mound of salty brown rice with minced red something sitting on top - absolutely no flavor. Everything was too salty - the smell of that over grilled charred meat overpowered any taste of the food in the Ramen. Not worth the wait. Poor service entering, during and just trying to pay the bill at the end. This is not the only Ramen shop in ElPaso and any raves are probably by folks who don't know great Ramen. Overall: 4.8/5 (dine in) We came on a Monday night so we were seated immediately. I do recommend they get a light up sign for the restaurant name since we almost missed it when we turned onto the street. There's plenty of metered parking in front and around the area. The menu is a QR code which they have ready on your table. They are really attentive and always refilled my water when it was near empty then even asked if we were ready for the check once we were done eating. Both ramen we had were really satisfying, full of umami, & balanced. They gave a generous amount of toppings as well. After eating the ramen, I still needed to get something sweet to clean my palette since drinking 3 cups of water wasn't enough so the sodium level must be off the charts :/ Hot Babe ($12): I got spice level 2 which is what the waiter recommended if you can eat spicy food and boy was it spicy. The broth was flavorful and intense thanks to the spiciness. It was pretty heavy so I couldn't drink all of the broth, and I did get bloated afterwards. The noodles had a great texture, and the meat was delicious. The soft boiled egg is also really good since they marinated it. Would recommend to my spicy lovers out there. Thicc Boi ($16): This ramen is a bit more expensive since it comes with an extra piece of chashu, an extra half soft boiled egg, and 3 pieces of gyoza but it was worth it! The gyoza was crispy and flavorful so eat those first. Their chashu is made differently and so freaking good! It's less fatty with more meat but it's not dry at all. We were really excited to come here since the photos looked amazing. We opted to sit in the small quaint outdoor space next to the restaurant to enjoy the nice weather. The servers are very nice and friendly, they checked up on us to make sure our water is filled. I have been to Kaedama probably around 8 time snow and decided to give a review down to 4 stars mostly for the flavor of the food. The customer service is always really great and the music is probably the best I've heard in a restaurant in El Paso. However, it's been very consistent that the food is just okay. The noodles that I usually get seem to be soggy and the broths are very inconsistent in their depth of flavor. I won't lie, it pains me to take this staraway because I thoroughly enjoy this restaurant, but I have to be true to the scale.
