The al pastor seeped into the shells which made it super flavorful and rich. Topped off with cilantro, white onions, pico de Gallo, sour cream, and lime, it tastes like heaven. The quesadillas were perfect. The cheese seeped into the shell which made it so tender but crunchy and it tasted amazing with the lime and salsa. However, the experience really highlights the classic food truck trade-offs when comparing trucks to brick-and-mortar sit-down places. At $4.39 per taco out the door, the prices align closely with what you would pay at a full sit-down restaurant. While you get convenience here, you don't get the amenities (seating, climate control, water, restrooms, or a table) that come with a physical restaurant at similar price points. While ordering is quick and easy, there is nowhere to sit down and enjoy your food, nor is there a sink or restroom to wash your hands before or after eating. If you are looking for a quick, good taco to grab on the go, this works. Just bring wet wipes, plan to eat in your car or somewhere else. For those reasons, I prefer a brick and mortar, especially when the food cost the same, but I needed a fix and this was a good alternative.

Only thing I would have like better if it was sliced through a mandolin to be more like a slaw rather than a rough chop with uneven pieces of cabbage and onion. I prefer the traditional curtido but would add red pepper flakes. The salsa was really good and everything went well together.
