To my surprise, the dish was served on crispy potato pancakes instead of an English muffin, which meant I got the best of both worlds. The combination was fantastic, and honestly, I think Eggs Benedict works even better on potato pancakes than on bread. Every bite was packed with flavor. I chose the Cambridge Skillet: smoked ham and bacon with jack and cheddar cheeses over seasoned ranch potatoes, topped with two over-easy eggs and creamy hollandaise.
