They go into the market in coron to buy all the ingredients fresh, and then they cook it right before you get there for your reservation. I wish I had known that before we went the first night. I wouldn't recommend ordering any seafood from here though. FYI - They're located on the second floor of the R2R Bayview Inn. It's open air dining, so there is no air con; you'll want to get a table near a fan. Their bathrooms are near the pool so be careful with all the water on the floor.
