I haven't gone to a knife sharpener for a while, and not to Ike since 2020! I came back to him for 6 of my knives, including one that was heavily nicked and a little rusty on the edge. He was able to fix it up and restore the edge! I specifically chose Ike initially because I wanted to someone who would sharpen my knives by hand(ish). He uses stone wheels, and that makes it much much faster than a whetstone. For people who provide sharpening services, I feel like I see the wheels or belts most often. After a little bit on the wheel, he finishes with a leather strop! My knives came out super sharp, and he sent me on my way pretty quickly! I don't remember just how long, but it couldn't have been longer than 30-40 minutes! Pricing is super fair as well! He charged a different fee for the edge restoration, which was also more than fair. I brought all my kitchen knives, two pocket knives and a scissor. Ike was incredibly helpful and gave me some great advice. Plus, he fixed a couple of knives that were damaged, which was fantastic--he got them done quickly! We did the paper test, and my knives weren't cutting as well as they should. I've sharpened them at home, and they work pretty well, but when I used them to prepare food, it was a huge difference. I brought in some older kitchen knives that were so dull they were basically paperweights. Within minutes, Ike had them sharper than sharp, and we had a great conversation while he worked. I brought in 4 knives and a cleaver that was damaged and in less than an hour all expertly sharpened, as good if not better than new, at very reasonable prices. Ike goes above and beyond with customer service providing edge guards, knife care tips and even a couple bandaids because he makes knives VERY sharp (it's a nice touch for humor, you are much less likely to have a knife slip and cut you when it's sharp, dull blades lead to more accidents). A couple of weeks ago I was looking to have my knives sharpened. I had used one of the mail-in services in the past and also a free service from a local kitchen ware store. The mail-in service takes a couple of weeks and the free local service is what you would expect for free. I needed something sooner and with better results. I contacted Ike and he was able to get me in very quickly. I went to him and because I only had a handful of knives to sharpen, I was able to wait as he worked on them and took them home in less than an hour. Ike was very friendly and efficient. Ike seems like a good guy and for highend kitchen knives he is probably really good. However... never, never, never ask him to do Spyderco serrated folders. I brought him two Spyderco Civilians and a Salt N1. He took them promptly and finished them in a day. But they were essentially ruined: for reasons I cannot fathom Ike flat ground the Spyderedge serrations. Went from expensive EDC PDW to unusable. I had to send them in to Spyderco to see if they could be saved, but so much damage had been done, even the factory sharpening team had to take off a ton more metal to try to put an true edge back on them. Never again. My bad for not going with a serrated specialist/pro, but I would have preferred Ike declined the job instead of ruining my EDC's. Addendum: Because I live and work twenty+ miles away, I had my housemate drop the knives off. This was, per my partner's Yelp check in, seven months ago. I use Yelp a lot to find places. I don't write a lot of reviews unless a place is exceptional, for better or worse. I originally chose Ike because I didn't want to be without my EDC PDW's for more than a day. Ike runs a cash only business, which I don't have a problem with, but which leaves documentation a little sparse. I am happy to verify that I was a customer, that my Spyderco's were worked on by him, and that ultimately I had to send them in to the factory in Golden Co. read more

They were ready the next day at the same time. The process goes like this: Make an appointment, drop them off, he explains what needs to be done to each knife, and the cost. You then schedule a pickup time. It's all out of his garage, and he is very flexible., and a friendly fellow at that. This is what I had done: Serrated bread knife: $7. Very sharp and all the points on the serrations are back. Nice. Shun Fuji 10" chef: $5 Shun Kaji chef: $5 Wusthof Suntoku: $5 Global Chef: $5 Utility with deep nick and broken tip: $10 Small Chef with broken tip: $8 Carving Knife with broken tip: $8 It's $5 for pretty much any straight blade. If it needs a tip, add $3. Deep nick? Another $2. Serrateds are $7. When I picked them up he had them all in safety cardboard sleeves. He demonstrated the sharpness of each by slicing through paper. Yes, they were very, very sharp. All of my junk knives (AG Russel) were brought back to life, and my badass Shun was sharper than ever with its 161 layers.
