They have a basic but solid menu, I look forward to seeing it grow for sure. I like that they have the option of corn or flour tortillas for the quesadillas. Typically you only get a choice with tacos. I appreciate how they let me customize my quesadillas and add shredded meat AND rice. It had good flavor but I would like to see them as even more. Abram, the gentleman that helped take my order and handed me my food, he told me there were two salsas and the red one was spicy, and the other one had good flavor Here's the thing in Colorado, there's always a promise of spice but no delivery. I must say he hit the nail on the head with both. Although I could stand for more spice, my tongue finally felt something in awhile! Both salsas combined definitely upped the flavor profile. I could see myself coming back!

And when did people start putting what I can only guess is cheese on them. For $30 and the "reviews" we expected the best ever. They should rename them masales because thats ALL there is, masa. Take a look at the pictures. One little piece of what I can only assume is chicken. Didn't even bother trying the pork, hubby tried both just for benefit of the doubt...yeah...just no. Maybe someone needs to learn how to make PROPER tamales. Seriously people DO NOT waste your money on these masales, I mean unless you love bland masa with couple peppers pieces here and there.

The flour absolutely taste fresh, they make them there. The quality is good, not enough to justify the heavy price tag. Thought they made a mistake. Tortillas are good, Mexican bread are decent. Some of the plates they serve suck and some are delish. It's a hit and miss from the menu. Good luck

From their birria ramen to their quesabirrias, everything on the menu is absolutely delicious. Their consomé? A solid 10/10--and yes, it's a guaranteed hangover cure! As someone who works in property management, I've also had the pleasure of partnering with them for tenant events at my properties. Unlike many food trucks that charge high fees and require deposits, La Única has hosted many events with zero fee's to the property--and their customer service is always top-notch. They're incredibly easy to work with, professional, and genuinely care about the experience they provide. They're so popular that there's always a line, but the way they crank out orders is seriously impressive. The only observation I've had is recently they've forgotten to include sauces in my to-go orders--so just double-check your bag before you leave. But honestly, that's a small hiccup in an otherwise amazing experience. Whether you're planning an event or just craving something incredible, go try La Única Birria de Res. You won't regret it!

There were about 10 people in line or waiting for orders around 11am on a Saturday. The consome is everything the reviews say. It's super flavorful and we had enough leftover to dip some tacos at home. Make sure you have napkins, because these tacos are drippy and messy in the best way. The orange salsa is great too. I ordered an agua de piña, a taquiqueso, quesabirria, and consome chico. It was a sharing 'snack' amount or a meal to yourself.

I decided on the pizza Birria and my dad decided on the birria tacos. The flavors were so big and so very delicious. The tortillas were crisped. The only things that could've made the meal better were of they gave diced jalapeños in addition to the diced onion and cilantro, and if they gave additional limes to match how many tacos/slices of pizza Birria they give. My drink the Mango Hawaiian Margarita was decent. I wish it had a better balance of tartness with the sweetness, it would've elevated the drink even more. I could see myself coming back time and time again, and recommending them for their Birria. It was that good!

The green salsa was simple and hot, and went great with the burritos, which were both very tasty. The carne asada tasted tender and the chorizo wasn't too oily and what oil it did have was pretty well absorbed by the eggs and taters. Little no frills spot. Service was friendly enough, very businesslike as they were pretty busy, Have to say, could use a little attention to the bathroom and the ceiling looked a little gross (some black grime up there) so if that bothers you, beware. The staff member helped me understand the menu and they took card for payment. Just watching them prepare the meal you see they put so much dedication in every single ingredient and how they place it and cook it.
