YES YES YES! waterbury may be quite the wasteland but you would never believe this amazing barbecue joint would be from here. I prefer them over hoodoo browns and bears smokehouse any damn day of the week. I first discovered them through a food truck when my dad and I went to the new england brewery and tried their burgers! We've been eating there since. They have your typical barbecue cuisine but every once in awhile they have great specials! I go here every Sunday before I head to the roller rink. Service is friendly, Cozy vibes. It doesnt feel like you're in dumpy waterbury. It's hard to choose a favorite, and Ive yet to find something I didnt like! Their catering is also great. The brisket is tender and their turkey is amazing and I hate turkey! 4 stars however, because of the tall prices. The somewhat small portions do not justify it unless its catering. Because of the recent water main breaks, thomaston ave is closed so you would have to park at the plaza around the corner and then walk which can be bothersome. I hope that can be resolved soon. First time coming here. We opted to sit outside at the picnic tables on such a nice day. Ordering was quick and bad service was as well We ordered the pulled pork plate with a side of Mac and cheese and also the baby back ribs plate with a side of coleslaw and cornbread. The food was very good! The pulled pork had NO fat and was very delicious, savory and tender. The baby back ribs fell right off the bone. Both Meats were very savory and delectable. The Mac and cheese had a peppery taste, which was something new and the coleslaw had a nice balance. Not too vinegary and not too creamy and the cornbread was just the right balance of sweet and salty. We also ordered the Blackberry Jalapeno Pineapple Margarita (Pineapple Jalapeno Tequila, Fresh Muddled Blackberries, Cointreau, Lime Juice, & Club Soda). FINALLY made our way out here! It definitely lived up to our expectations. This is legit BBQ with some additional fun BBQ menu items to keep it fresh. It was very quiet besides some takeout orders while we were there. They have a very large outdoor area with tons of picnic tables (it is gravel, just FYI) as well as an interior with a small bar and maybe 10? high tops. There are 4 booths in the far back as well. It is counter service, but they bring the food to you. The fella taking our order was super friendly and accommodating, and my husband had some nice chats with the pit master who was happy to share some info about their cooking process. I wanted to sample a spread that included a variety of their smoked meats and sides, so we shared 2 meat platters that come with 1/3 lb meat and a choice of side - we got brisket, turkey, collards, and Mac and cheese- we tried a link of jalapeño cheddar sausage, and also a loaded tots special that had some cheeses, hunks of pulled pork, jalapeños, and aioli. Everything was fabulous! The brisket was tender and juicy, and the fat was perfectly rendered. Smoked Turkey is often a sleeper on BBQ menus, and theirs was no different. The skin was rendered and crisp, not rubbery at all, and the meat was tender and not hammy as some less expertly smoked poultry can be. The sides were great too! The collards were soooo flavorful and a little spicy, and their Mac and cheese is 100x more flavorful than the average BBQ joint. A little garlic and what tasted like a blend of cheeses in a bechamel. I really enjoyed the grind on the sausage. It was a coarse grind which gave it great texture, and the casing was crisp. Tots were crispy and loaded with big hunks of pulled pork that included some bark. A++ Yes, BBQ is expensive and it's not a white tablecloth event. But you're purchasing a product made of meat which is already expensive, that for many cuts has been cooked for 20 hours at a weight loss of 40%. As we pulled up in the evening, we can see patio lights, looks like an inviting place to sit weather permitting. Lisa took our order at the front counter and brought our items to our table. We tried beef brisket, Mac and cheese, collard greens, and banana pudding. The brisket was perfectly juicy and tender. I usually like a cheese pull and crispy top coating on Mac and cheese, but this creamy one was equally delicious without it. These were the best collard greens I'd ever had. With pickled red teardrop peppers and shreds of beef. The banana pudding was lacking, ever since I tried Magnolia's, it's hard for me to enjoy pudding skimpy on the banana. If anyone was ever in doubt that Connecticut can cook up a true Southern BBQ, look no further than Hindsight BBQ! Honestly, my visit today came because I needed to hit up a favorite eatery of mine after finding out my favorite taco place in the state just closed down. I needed my Hindsight BBQ to pull me through and give me that good ole sweet-lovin' BBQ, and once again it delivered with flying colors! You can actually smell that good ole Southern cooking before you even get to the property, so you know something wild proper is coming from this joint! Upon coming inside, it is like entering any good BBQ joint down in the South, and you definitely get that Southern flair from the employees too. This place was rated "Top BBQ Joint Outside Of Texas" by Texas Monthly, and every time I've ordered from here, I tasted why. That award was well-chosen here. I've even seen the pit masters do their thing and you can see just how much work and love goes into each barbecue. You can even see stacks of firewood they have right outside that get destined for the pits. Over the last two years, I've ordered plenty of items from Hindsight for plenty of reasons. I once grabbed up a Hei-Hei Burger Labor Day weekend last year as part of training for a half-marathon. I've gotten quesadillas after a trip to the DMV, their Sidewinder Fries, and a whole lotta other items too. This visit, I got the cornbread, Double Bacon Burnt Ends, Mac and Cheese, and Mile High Peanut Butter Pie. The cornbread was soft, each bite inviting you for more. The Burnt Ends, tender, juicy, and that Alabama mayonnaise glaze on top make each bite that much more delightful. Mac and cheese? That was fire, love and care in each bite. I'm actually still eating the pie slice as I write this, but let me tell you it is sweet. Best served with a glass of milk if you ask me. Hindsight was recommended to me by someone and I happened to be in the area and starving so tried it out. I ordered the brisket plate. Unfortunately it comes with only one small side. For $21 (with tax). The meat in a platter was only 1/3 lb which came to two pieces. $20 for one small side (and I do mean small) and two pieces of brisket. For that price you should get two sides, which from my experience two sides is standard for a platter at most restaurants. Either way, when I got my food I was willing to still eat it based off the great yelp reviews bc...despite the ridiculous size to cost ratio...I hoped its deliciousness would justify it. It did not. At all. My brisket was not tough but it was far from tender or "melt in your mouth" as some other reviews have described. The worst part were the greens. I'm sorry but they were awful. Utterly tasteless as if they were not even seasoned with a single speck of salt. As a born and bred southern woman I've been eating collard greens my whole life and these were the most bland greens I've ever had no exaggeration. I took two bites and a couple bites of the brisket before giving up. I was still trying to make it work and figured I'd just order something else. I perused the menu and decided to try the pork belly taco. However, learning my lesson about their tiny portions, I made sure to ask the cashier how many tacos came with the order. One! 10 dollars for one taco. I opted to just get a refund and left still starving. It's a shame bc the price wasn't my main issue, I will pay top dollar for good food. But the food can't be small, mediocre AND expensive. Despite this experience and although I wouldn't return, I must say the girl who took my order was absolutely amazing. She was super patient, professional and understanding. She graciously agreed to the refund with a smile and never once made me feel bad about it or was dismissive. Give her a raise. Came to hindsight on a beautiful Sunday afternoon to treat my parents who came up to Connecticut for lunch. We appreciate and really like the outdoor seating. It's really gave the vibe we were looking for when wanting some good BBQ. Upon entering, we were welcomed by a kind person who explained to us how to order how we will receive our food and then went ahead and patiently took our order. We all essentially got the platter that allows you to choose to meats and two sides. Along with that, my family decided to get a couple individual items so that we can all try. After putting in our order, I was asked to check the order list to make sure we have everything we asked for and it all looked good. Upon receiving our order, the person who brought out the food was pretty rude. Personally, for one of my meats, I requested pork burnt ends, which showed on the receipt instead she brought out pork belly and then a rude way told me that pork burnt are not included as one of the meats for the platters. She proceeded to say she can just bring me out barbecue that it will literally be the same exact thing with a condescending tone. When placing all our items on the table, we noticed that she missed the beans and she said to us that we did not order any beans and that she brought everything out that we ordered. we then took out the receipt and showed that the beans were there. Her response was, " I did not see that in the mix of ALL you guys ordered" again. This came out in a very rude way. It's not like we just spent $250 in this place. Aside from what we all agreed was a rude interaction. We did enjoy the food. It was actually really delicious. The only thing we didn't like is that the meat was cool temperature and we wish that it was actually hot. The only thing hot that we received were the sides. Hindsight Barbecue was one of the food trucks that was at South Farms food park and my friend and I decided to check them out. Hindsight Barbecue also has brick and mortar restaurants in different parts of Connecticut. I've read that they were the top twenty five restaurants to eat at so it was only right that I had to try it out. My friend and I ordered the Brisket and Macaroni and Cheese. The food was okay but the food was lukewarm and the Macaroni and Cheese needed more flavor. The Brisket was good and it was tender but again it needed more flavor and it was also lukewarm. The customer service was great and the staff were really friendly, outgoing, and helpful. I would definitely try their food again but I will try there food at the restaurant next time. read more

Surely, my 100th Yelp BBQ review isn't going to be a place in Connecticut of all places, right? Right?!?! Well, from the guy who told you YEARS ago to go current #1 BBQ restaurant in the world (Burnt Bean in Seguin, TX), here I am telling you that there are a couple of places around the Northeast that are staying true to the Central Texas tradition regardless of location. Probably the first two items you will hear about BBQ from me involve meat and wood (cue Beavis and Butthead laughter). They are using prime brisket at Hindsight. I am so used to getting fatty brisket in Texas so I forgot to ask at Hindsight. In hindsight, that was a mistake as my place was only lean cuts. They were still delicious but it does make me wonder if their fatty cuts have that velvety mouthfeel that really takes prime brisket to another level. So what about wood? Well, it's pretty much impossible to source post oak outside of Texas so that flavor is missing. I'm fairly sure they use a similar oak to the white oak that I found at most BBQ joints in Oregon. In my mind, white oak imparts a milder flavor on the beef but some people really like it. Again, I'm not 100% sure what they are using, but it seems more like white oak than post oak (and yes, they are related, but they really do leave a different taste). Am I aware that there are different forms of BBQ than brisket? And that some people don't even consider brisket real BBQ? Yes and yes. What does that have to do with Hindsight? Not too much EXCEPT holy damn they made some kind of blueberry and cheese sausage that sounded absolutely disgusting but ended up being absolutely mesmerizing. Is this a CT thing? I don't know but it was exceptional. I had some ribs as well, but they were easily the bronze medal behind the sausage and the brisket. While I wish Hindsight was a little closer to my door, it's definitely worth a weekend visit to Waterbury on a sunny afternoon when you are in the mood for incredible BBQ from an excellent team. read more

We ordered a 1/2 pound of beef brisket, a small collard greens, & a large Mac & cheese to share. The waitress was sweet & attentive! She brought out our food after a little bit of a wait. The beef brisket was tender & melted in my mouth. Platter came w/ bbq sauce. I tried a bit but not too much b/c I feel like bbq sauce empowers the taste of the meat. It was a bit sweet & hot. It tasted just right for me not too sweet & not too hot.The Mac & cheese had no cheese pull so I thought it wasn't going to be good. It was surprisedly. The collard greens let me tell these collard greens were the best I ever tasted. It had tiny tomatoes that had a little tangy burst. It also had beef brisket in it. Yasss,beef brisket in it. I have only had takeout from hindsight so here is my experience with that. The food was packaged perfectly and was thoughtfully placed in a manner to keep it safe during transport. For my order, I tried the pulled pork, brisket, Mac and cheese and baked beans. I also had the cornbread, because I love cornbread. I was finally able to stop in into Hindsight with my family and experience what I heard in reviews both online and from my son-in-law. We went on a very chilly Saturday evening at primetime with a 6 o'clock arrival and we were able to order at the counter quickly and efficiently, find a table among a few that were available that were cleaned and ready for us, and in a quick time from order placement able to receive our orders correctly and accurately. I chose the brisket platter as I heard so much about it. It came with one choice of side and some pickles and pickled onions. The brisket was cooked properly , had a good moisture content and was very flavorful and delicious). There was a side container of a house made barbecue sauce should you wish. I chose the baked beans as my side which were very good with a great texture to the beans and not overcooked. My wife and daughter both had the pulled chicken, which they each raved about. My son-in-law chose the Texas Trinity platter; a combination of three meats and two sides. Sausage, ribs and brisket. Each portion was a very good size and very well prepared. The sausage and the ribs were both excellent in taste and texture. Hindsight has a very good beer selection and other wonderful beverage choices, and sides to experience. I've wanted to try Hindsight and I've recently noticed their food truck on the Gastropark schedule. I scooted over for a quick workday lunch. I ordered a brisket combo, which came with a small side of Mac and Cheese, and pickled vegetables. I ordered an extra side of coleslaw. I thought the brisket is about as good as you find in CT. The brisket was fairly lean and had good bark. It was a touch on the dry side, and didn't pack much smoke flavor. I wondered if there is a difference in quality between their Brick and Mortar in Waterbury and the food truck. But overall, the brisket was good. The Corkscrew Mac had a mild truffle flavored cheese sauce. The pasta was well cooked, and the seasoning dots on top were inviting. The sauce was creamy, and when I fork-lifted a corkscrew, cheese stretched from below. Above average Mac for CT. I respected that Hindsight went for something different with their coleslaw. They had some familiar. Red and green cabbage. Carrots. Celery seed. Fresh herbs. But they added apple slivers as well. I welcomed the jolts of sweetness. Hindsight is a good addition to the GastroPark lineup. GastroPark has felt like a Texas style food truck park, and a BBQ truck cements that status. I tried the Texas Trio which is beef brisket, pork ribs and beef sausage with cheese and two side for $40 as of 2025. This comes with two sides and I got macaroni and cheese and BBQ beans and I added honey butter cornbread for an extra $5. I also got banana pudding for dessert and got local craft beers at the bar side. The brisket was extremely dry. Texas barbecue is known for their brisket which should be soft, moist and beefy with little chew. The brisket was close to becoming jerky. This was a Friday afternoon and it was busy and the food rotation was happening so I thought I got the good portion but it must have stayed in their hot box way longer than it should and it dried out the meat. They served a vinegary BBQ sauce and this helped get the brisket down without choking. Very disappointed at their attempt to Texas barbecue. The pork ribs BBQ sauce was good and one of the two ribs were just good. Fall off the bone for one, barely any meat and hard for the other. I thought I was chewing on bone. I definitely paid ahead for a rib that lived up to the name, RIB minus the meat. I've had store bought that were better and even chain restaurants serves better frozen ribs than here. The sausage was dry. There was cheese inside but it wasn't soft or blended with the meat. I think it was beef brisket and was a whole sausage cut up in sections. It had a nice snap to the natural casting but no bounce or natural juices to the meat. There was flavor but not enough spices so it remains lower mid level on spice. They did have a mustard sauce in a plastic cup that helped with swallowing. Along with the sides, they give you dill pickle chips and onions. These were good. Now the sides...Mac and cheese...while not the box kind, was terrible. Maybe I got here at a bad time (afternoon, after the lunch rush but way before the dinner rush) the macaroni was fine but the cheese was solidified and flavorless. Thick white cheese that could have had an amazing taste, but was leftover from two nights before (my opinion) made it bland. The barbecue baked beans was the only winner. Looks like they use two types of beans and the flavor of the BBQ sauce wasn't overpowering or overly sweet. It hit the Goldilock zone. I had better but I couldn't hate the taste. The cornbread was overbaked. Brown, almost burned and air dried. Very, very dry. Very sad as I heard good things about the cornbread just to try it and got the worst of the bunch. Banana pudding. While there are certainly many recipes, the basics are banana pudding/custard, real banana slices, whipped cream and Nilla wafers. There was no Nilla wafers here but pie crust crumble. This should be renamed as banana cream pie cups. It wasn't bad, it just wasn't the basic banana pudding made with Nabisco Nilla wafers. Positives: I liked the outdoor picnic table seating. The real wood burning smokers and wood piles that can be seen from the parking lot. Plenty of indoor/outdoor seating with about 10 chairs at their bar. The bar serves at least 9 draft beers and several cans and bottles, hard seltzer, ice teas and a variety of liquors and cocktails. If you want an espresso martini, you can order from here. Non alcoholic drinks and sodas, ice teas and lemonade drinks available. You can inquire about catering as they do have a food truck for any occasion. Would I go back...? Not at this time. It's more expensive as good barbecue places would be but I think they need to improve or get back to what they once were. The pitmasters may need to be retrained and they need a better understanding of supply and demand. I feel as though the brisket was sliced then put into their hot box much longer than it should have been. Two options: turn the brisket into jerky and sell these as a take out only, limit them as a specialty. Or, turn the dried brisket into a chilli. The sauce will rehydrate the meat. Just get the right recipe and you can still sell these slow cooked for days. There's no chilli or jerky on the menu so it's only a suggestion. read more

During my first ever visit to Hindsight BBQ yesterday (12/20/2024), I asked for two orders of the Prime Beef Brisket, Mac & Cheese, and Collard Greens....being careful to specify and repeat that I wanted two separate orders. A no eye contact "Uh-huh!" Was all I got as a response from the lady at the counter raising her head and looking downwards through the lower portion of her progressive lens eyeglasses while pressing away at buttons on a register screen, supposedly taking my order. After waiting roughly 10 mins, the lady calls my name and hands me a folded and stapled bag. I got home and opened the bag to find only ONE CONTAINER, and the contents thereof; a few slices of meat, a serving spoonful of collards, and a serving spoonful of mac & cheese. Total: $47.59!! With some weird $11.99 "More Beef Brisket" charge no one bothered informing me of. This was my first visit to Hindsight BBQ, and it will most DEFINITELY be my last. read more

First this place is Veteran Owned and Operated. Walked in wearing my 1st Cavalry Shirt and owner immediately starts talking about service. The lady working that register was so nice. The sliced brisket sandwich did not have much flavor and a very subtle smoke. My personal preference is to have a smokiness flavor to come through. Wow. Such great food and a super cool atmosphere. Very friendly and it looks like it would be a hopping place during prime times and events. We had the ribs and pulled pork. We were a little disappointed with the portions. You can tell they likely weigh how much you get of the meat. That's ok, but my mac-cheese side cup was small and not very full. This is your classic barbecue shack that you might find off the beaten path in Deep South. You walk into a very welcoming staff with a bar filled with beer options. The menu has all classic bbq items with some twists like empanadas loaded with great meats. Smoked wings are a nice touch as well. Huge parking lot and plenty of outside seating.
