There are hundreds of taco place's in Olympia and this one ranks high above most all others because it's fresh and homemade and it tastes exactly like it should. Prices are really good, too. The interior decoration is so cute! The chips were fried in old oil, they had that bitter rancid taste. Husband and I got the refried bean and black bean tostadas because 3 of the 5 tacos offered were egg based. I normally wouldn't order vegetarian items, but I don't like chorizo or chicken fajitas which were the only meat options. The refried and black beans were definitely canned and no seasonings were added. The salsa was ok. The tortillas are touted as homemade but I highly doubt that. We also got the chips and guacamole and it was pretty good, but the chunks of avocado were so large we couldn't scoop it. No silverware was around to chop it up ourselves. Not great food by a VERY long shot, but the look of the restaurant is great. Staff seems nice but this is maybe the most intensely boring food I've ever eaten. Not too expensive, so that's nice in 2026, but I'd rather pay more and have some depth of flavor. We tried each taco but the chorizo and fajita. We were going to get the fajita but they were out; no big deal. We also got chips and beans and red and green salsa. The beans and chips were bland even for refried beans; the chips had more flavor I kid you not. Refried beans anywhere are usually not the most interesting thing on any menu but the epic mundanity of these beans will live in my memory. The breakfast tacos. Whew. You can absolutely make a scramble at home, throw it in a tortilla, and have something with more character than these. You'd also have the sense of accomplishment rather than the sense of disappointment shelling out more than $.99 for these exercises in banality. I really, really, *really* can't overemphasize the point that an at-best mid home cook can make a better breakfast burrito or taco. The bean and potato burritos were likewise achievements in mediocrity. The bean burrito did have cheese (the menu says there is a lot of cheddar on them; I would fervently dispute the claim. The bean burrito also the distinction of being too hot to pick up until we were fine with everything else. Insanely hot. I couldn't figure out how the outside could be so hot and my wife pointed out that apparently the tacos are all pre-made and just sitting in heat. I didn't see this but it would explain the sad, soggy state of everything. I hate this on principle. Allegedly the owners are from Texas and these are "authentic" Tex-Mex tacos, but i have a hunch it's like those "authentic" Italian places who have an owner from Sicily but serve carbonara with bacon, peas, and Alfredo sauce. I love Tex-Mex but the things I love about it - the spice, the smoke, the char, the adobo, the chilis - this place has none of them, at least in the items we got. It is possible to make a knock your socks off breakfast taco but this ain't it. I don't know if these are "authentic" or not, but authentic Ohio-Valley style pizza has cold toppings so authentic doesn't mean good. The facilities were fun and new and immaculate. After taking a break from trying this spot out (due to *multiple* unfortunate visits), I figured I'd give it a try once again, to see if they'd worked out some of the issues myself and friends have experienced. I'll start by saying that the tacos today, were much better. They were hot, fresh and an adequate amount of filling. The black bean + avo taco is a great addition to the menu. I'd not yet tried the soup until now, and while it was quite tasty, it wasn't exactly what I expected for "tortillas soup" .. it came with zero toppings, no avo, no tortilla chips, etc, as stated on the menu, that it would have. I didn't realize this until getting home, as my food was to go. The soup cup was also only 2/3 full, and included one single piece of chicken, making nearly $10 for soup outrageous. The staff seemed really chaotic, again- even with limited patrons. While this seemed passable before, you'd expect after being in business for months now, it would be more fine tuned. It's not very inviting. The woman at the window has been the same one I've seen at nearly every visit, and she had to yell at the kitchen repeatedly for one of my tacos. This place is absolutely stunning, and perhaps if you're a drinker, going just for margaritas and the aesthetics, then it would be fabulous. I just think at this point I'm going to call it, and not give it another go after this. I've gone at least 7x now, because I truly have wanted to have this be THE spot, but I just can't see it improving unless they hire someone knowledgeable of running a kitchen/restaurant properly. $20 two tacos, and a partial cup of glorified soup (because let's be honest.. this is $9+ broth...) is incredibly overpriced. As someone who eats gluten-free, finding great tacos isn't always easy, and Hector's absolutely delivered! I ordered my taco on a corn tortilla, and it was fresh, flavorful, and incredibly satisfying. I really appreciate that they clearly offer gluten-free options so you know exactly what to expect. 2.5 Had Bacon, egg & Cheese and Choizo & egg. B,e,c was good. Tasted like bacon, egg and cheese, no seasoning. The choizo and egg was bland. I would have never known it was chorizo if I hadn't ordered it. Unfortunately both had been sitting a while. Clearly made ahead of time. The tortilla wraps where stale/dry/hard on the ends so that was a bummer. I tried the salsa and it was watery and didn't add much flavor, it tasted like it was fresh made but no seasoning to speak of. The green sauce was nice and spicy but it was lacking depth of flavor. Also tastes fresh made. They open at 8am which doesn't work for grabbing a breakfast taco before work. Probably won't get breakfast tacos again. I'm also highly disappointed at the fact they claim all their tortillas are homemade and when i asked to substitute for a corn tortilla i was again reassured they were homemade made. I only had to take one look at the tortilla and could instantly tell they were NOT homemade. I would've appreciated being told the truth so I wouldnt have bothered to swap them out. I'm Hispanic and so disappointed. Their burritos are small, flat and too pricy for a burrito that resembles a Taco Bell burrito. I really suggest if you want your restaurant to thrive.. make your food hearty, like an authentic Mexican eatery. Great potential, but missing that San Antonio flavor As a San Antonio native, I grew up on breakfast tacos and know exactly what a great one should taste like. My go-to is carne guisada with cheese, but I also love the Texas staples like barbacoa, chorizo & egg and potato & egg. So when I heard Hector's Tacos was bringing "Tex-Mex" breakfast tacos to Olympia, I was genuinely excited. On my recent visit, I ordered three bacon, egg & cheese tacos, two chorizo & egg for my family. My first impression was disappointment when they were pulled from a plastic bin, bagged, and handed to me at the window rather than made fresh. Once home, I unwrapped them and noticed the tortillas were Texas-style and tasted homemade -- please keep that. Unfortunately, the fillings didn't match the promise. The bacon & egg tacos were just okay, nothing memorable, and the chorizo & egg was dry. Overall, they tasted like something an average home kitchen could produce rather than the bold, comforting flavor I associate with San Antonio. I was really hoping for that taste of home. If you need inspiration, a trip back to South Texas -- places like Sabrositos in Converse -- is a great reminder of what true San Antonio Tex-Mex should taste like. Also, Tex-Mex isn't about calorie counting or gluten-free trends -- it's about flavor, richness, and authenticity. Lean into that. Finally, consider adjusting the pricing. When the food is dialed in and the value feels right, the line will wrap around the block. Hector's has the foundation -- especially those tortillas -- to become something special. We enjoyed breakfast tacos this morning at Hectors! We tried a variety including egg, cheese and bacon, bean and cheese, potato and egg, and chorizo and egg. We thought the tacos were good but could have used a little more kick! Breakfast tacos are not inherently spicy; you are supposed to add hot sauce to get the spice level you want. However, their sauces were pretty bland. Since we are from San Antonio we would have preferred the more traditional red and green sauces (one of those should be hot). Overall, though, we liked the food and definitely will go back. It's very clean and comfortable and I know they plan to expand their menu. We need good breakfast tacos in Olympia so please support them! read more

The service was very good and the employees did great serving me. As a Texan, I eat breakfast tacos almost everyday and had to try the tacos, red salsa, and queso. I had bacon, egg, and cheese taco. It's was ok, pretty bland, not a full piece of bacon, and almost no cheese. The tortilla was solid. This taco was pulled out of a warmer pre made, this would never happen in Texas at a restaurant. This happens in gas stations. The red salsa and queso had little flavor. I truly went to get a taste of home but this didn't happen. I will go back for lunch to give them another try. A welcome addition to the neighborhood with a handful of breakfast-taco and soup options and a soon-to-be-expanded entree menu on its way. Breakfast tacos are usually pre-made and waiting for the server to bag, but they still taste pretty fresh. Chorizo and vegan option had more flavor than the more-plain egg and bacon. Salsas claim to be homemade? Good, but you be the judge... Tortillas are good, but not the star of the show (like they kind of should be). The soup was expensive for the serving, but very tasty. I was in town on a work trip and happened to pass by this place. It was completely packed, which I always take as a good sign, so I decided to give it a try, and I'm so glad I did. This is the owner's first restaurant, and they truly went all in. Everything, and I mean everything, is made from scratch. You can taste the care and effort in every bite. The Tex Mex food was absolutely delicious. What really stood out, though, was the staff. They were some of the friendliest I've interacted with in the past year, welcoming, attentive, and genuinely excited about what they're serving. They even let me sample their house made margarita, also made from scratch, and it was fantastic. I spent several months traveling throughout Latin America this past year, and I can honestly say this place ranks right up there. It was refreshing to find Tex Mex this authentic and high quality in Olympia. I wasn't expecting it. If you're in the area, this spot is a must try. Many of the side items tasted like canned food including the beans, which is unacceptable for a taco restaurant. I've read through a lot of these reviews, both positive and negative and I am surprised to see that the owners are fairly meticulous in addressing each review regardless of its rating. I don't often leave reviews for restaurants and I've never left a bad review because I think being smarmy, short, and mean on a review board is both weird, gross, and largely ineffective. Also, as Olympia residents, if we want to continue having solid and delicious restaurants open in town, we need to give constructive feedback so that these restaurants can accommodate and improve. My wife and I really really really want this place to succeed, and we will certainly be back later in the year to see if some of these aspects improve. There's been a few Oly restaurants in recent years where their grand opening was not quite there, but then months later, they've worked out the kinks. I'll start with the good: The location is fantastic and the space is really cute. The upstairs veranda is a good use of space and makes for a neat dining experience. The entire staff was incredibly kind and accommodating. Everyone seemed to be enjoying their time and we were checked on frequently. The slushy margs were solid. I don't think restaurants get enough credit when they nail down the slushy consistency. We specifically ordered the sangria marg which had a float of sangria and it made for a well-balanced drink. There was verde salsa that came with my meal that was pretty dope as well. Some constructive criticism: A taco spot really should have more than 5 taco menu items, especially when 3 out of 5 of those items are geared towards breakfast. This means if you're coming to Hector's for lunch/dinner, and you're looking for tacos, your only options are a bean and cheese taco or a chicken fajita taco. I was really hoping to see at least one or two of the following: shrimp, fish, carnitas, lengua, carne asada, al pastoor, tripa, barbacoa, or even chorizo without the egg. We got the Tejas Trio to share, and like the menu item describes, this comes with 18 ounces of dip, which is incredibly generous! However, it also comes with a handful of tortilla chips, enough to make up a single layer on the tray it came out on. We saw that the chips themselves came out of a plastic bag, and tasted like it came from sysco or another big box food distributor. Then again, I could totally be wrong and that could be how the chips are stored. I am more used to the fried-in-house chips where the restaurant can control the salt level. The dips themselves, however abundant, had some issues. I don't agree with some reviews regarding the refried beans. The flavor was good but definitely over-salted. The queso dip was thin and lacked spice and flavor. Now the guac was definitely browning, which happens when avocado oxidizes and doesn't affect the flavor. I've seen reviews say the same thing and the owner advising they are working on a fix for it. However, the browning was minor in comparison to the flavor and texture, which was a bit funky. I'm sure as time goes by, the chefs will improve upon this recipe. For our main dishes, we got a cheese quesadilla with added chicken and the bean and cheese tostadas with added chorizo. These were ultimately fine, however, the kitchen had forgotten to add the chorizo to the tostada, so instead the chorizo came out in plastic ramekins. That's absolutely no issue, totally understandable. Chorizo is typically pretty flavorful and swimming in its own oil, which adds flavor. However, this chorizo was bone dry and a little hard to swallow. I know the chorizo is provided by Heritage Meats, local to WA and pretty solid, so there must be something about the way the chorizo was stored that it lost its oil. My main point of criticism regarding our two dishes is this: A few times we were told by the staff that they had proudly added the quesadilla and tostada to the menu recently. These two dishes are largely just cheese and tortilla, the base building block for nearly all of the other menu items at a Mexican restaurant. This is kind of like going to a bar and the bartender proudly stating they've added old fashions to the menu, knowing full well they already have bourbon and simple syrup to make other drinks. I really really hope we see more complex items like long marinated pork/beef or unique items like ceviche. The layout of the upstairs bar and veranda needs some work. The tables and chairs alone are a bit overcrowded, to the point where we heard a staff member admit "yeah, we probably need to remove some tables." I'm sure there's a reasonable explanation as to why the slushy machines aren't upstairs in the bar area, but this ends up causing the upstairs staff call to the downstairs kitchen via walkie-talkies. Then that same upstairs staff has to run down, grab the drinks, and run up the stairs that shares foot traffic with the customers, making the space feel more cramped. If you're craving real Tex-Mex in the PNW, this is the closest I've found. And that's coming from a Texan. Everything had that comforting, familiar flavor you just don't see much up here. Fresh, simple, and seriously satisfying. I live in Portland and honestly might need to find more excuses to make the drive back. Also- the interior design is 100% - so funky and colorful.
