She came to New Mexico Junior College to run on the cross country & track teams. Now she coaches there. Has a family here. And is a "boss babe." I thoroughly enjoyed the jerk chicken tacos. It was three tacos with very fresh toppings of cabbage, cilantro, onions, a jerk sauce that was only mildly spicy for me, and limes. The only drawback was a bone I found in one of my tacos. The amount of shrimp is fairly decent. I came kind of an off hour at close to 3 PM, so the food probably wasn't the freshest, but it was still really tasty. The shrimp is a bit overcooked. Takeout boxes come with an egg roll, fork, napkins, and condiments. Service is always fantastic. The guy who was at this trailer is often at the Pandita Express #2 trailer. Their prices range from $4-$13 per item. Recently Ms. Becky of Salty Frog (a boutique and gift shop) announced on social media that Juice Wrld would be a permanent fixture in front of her shop. Shout out to the amazing Becky! After science camp, I took my oldest daughter. We both tried a bowl ($12 each). She opted for match as her base, granola and chia seeds for toppings, strawberry and kiwi, and honey drizzle. It was good, but the matcha is not really all that sweet. My bowl went like this: coconut base, chia seeds and white chocolate chips, pineapple and raspberries - all drizzled in agave. This was super yummy and much sweeter than hers! Cash is accepted. It's just a theory, though. Throughout the years since I have been back in this small dusty town, I have seen this big reddish trailer set up at various events. The most recent place I had their barbeque was at a karate event. It's good BBQ, however, I prefer my brisket to be more on the tender and smokey side, though. Their brisket is on the mild smokey, but it lacked that juicy and tenderness I craved. (It's probably because we got to the trailer towards the end of the event.) I thought my small brisket sandwich was going to come with at least a cup of bbq sauce plus a scoop of potato salad and beans, but I only got pickles and sliced onions. Lol. That's a bit pricey for $10. My daughter had brisket nachos that came with lots of melted cheese, some diced red onions, and sour cream drizzled over it. She shared with me because I was still quite hungry. The employees were friendly and welcoming at the window. It sure does take a while longer than I anticipated to get orders, though. My chance finally came, but all the vendors at the farmers market got rained out on July 12, 2025. Since I followed them on Facebook I found out that they were still offering plates, but the pick up had been arranged at an alternative place of business. I was game! On that day, they had the following available: + paneer butter masala + lentil curry + samosas A plate of paneer butter masala was $15. I knew right away that this was going to be a very mild mildly spicy dish. It actually had a bit of sweetness to it, but my favorite part was how creamy it was. There were a few chunks of chicken served with Basmati rice. Some naan cut in half was also included. This was perfect for my appetite, but if I were absolutely famished, I would probably order another side dish or appetizer. The owner asked that I let her know how it was and if I wanted her to make me a special dish, she would be more than happy to do so. How awesome is that?! I definitely want to find out what white curry tastes like because I don't think I've ever had it not even after living in the LA area all that time.
