It really could not be any more fresh. This is very much a sushi bar. There are no tables or booths. Everyone sits at a U shaped bar with the chefs in the center. You have your own chef shared with perhaps 2 or 3 other customers. The ambience is modern and upbeat but minimal. The price was right, the fish was fresh and service was personal and excellent. This didn't both us as we were first timers and really wanted to try it -- so we put our name down and checked out the local thrift shops and bars next door. We ended up getting a text that our seats were ready at the 2 hour mark. It was safe to say that our experience was absolutely perfect!! Every hand roll we tried was even better than the last. I couldn't wait to visit this sushi restaurant; the reviews and reputation were more than tempting. I was in the area for a Yelp event, and this was located about ten minutes from where I was. I placed a to-go order, and I learned that was not the best idea. I found they had a Wix web page and another; the other had a full menu to include the rolls pack. The other website doesn't help either. So I took a chance and ordered four rolls. Crab - Was good, and was fresh. Salmon - Was fresh, but not my best choice. Spicy Salmon - I was not a fan. Shrimp - I enjoyed this, but the texture was different for me. Before getting the roll, which was my third option, I asked for two things they did not have, which were on the menu. I arrived an hour after they opened, and they were already out of that item? Their menu, which can only be viewed in the restaurant, varies depending on the dining experience (lunch/dinner). I assume. When I arrived home, I noticed they did not include wasabi. What? Sushi/sashimi aren't the same without wasabi and the additional condiments. This definitely was not a pleasing visit, but I am willing to give them another try. I will only dine in, I feel that's when you'll get the full effect of what this restaurant truly has to offer. The gentleman who took my order was really sweet and was patient when I couldn't figure out what I wanted, due to them being out of what was on my list. We were 15th in line and had arrived there around 445. when you are seated, theres a tiny menu placed at each station that has al le carte and combo selections. I opted for the 4 combo handroll and had ordered al le carte items like the Toro handroll, eel handroll, mizayaki beef, uni with toro and salmon truffle. Overall, all of the items were amazing. Seaweed was crispy and crunchy and each handroll had a good amount of "fillings". The salmon truffle is slices of salmon sashimi with truffle sauce and came with 5 pieces. I personally judge my hand roll places based on the quality of their crab roll, and this one was by far the best. Sweet, flavorful, and meaty. Each roll is a generous size as well. If you ask anyone living in Fort Worth what is the best sushi place in the area? They will tell you Hatsuyuki. I mean... it's good but it's kinda the same as other handroll places you find on the Dallas side of town. However I will agree that it's probably the best sushi you can get in the Fort Worth area. When I dined there I told them I wanted the omakase with no limit. Limit being the amount of money I was going to spend. What does this mean? It meant that my omakase became an a la carte experience. I just ended up telling the chef what pieces I wanted and he made it. Like previously stated, the sushi is good. I'm not going to complain about the taste. I do like how they have what ingredient is available on a hand written board. One suggestion I do have for Hatsuyuki is they should do a reservation system. This place was great! There is parking if you get there early enough but you have to wait until you get inside the restaurant to scan the QR code for free parking. I got there pretty early but noticed as we got closer to opening time and there was already a line forming at the door. But onwards to the food and service, it was friendly service where they took our orders but also left us alone enough to talk with our parties. Our party thoroughly enjoyed all the hand rolls and nigiri sushi that we had at this establishment. At the time we dined here, there were pre-fixed options of 3, 4, and 5 handrolls. Our party opted for the 4-handroll options each which included a salmon, yellowtail, bay scallop, and a crab handroll for $17.50 that are mainstays that should be tried. This was just $3 more than the 3-handroll option which did not include the yellowtail handroll. The 5-handroll option was a steeper increase to $24.00ish for an additional lobster handroll, which is a slight discount to the price if you were to order the lobster handroll a-la-carte. I'd advise the 4-handroll option and ordering something off the daily special menu if you're hungry hungry like I am all day everyday. If available the spicy tuna handroll (w/ shrimp katsu, fried onion, and Korean seaweed), salmon belly, and the eel nigiri are excellent. All the sushi here was excellent. Flavors were all very clean and not overly muddled in any way. You taste what you're ordering. I was pleasantly surprised with the real grated wasabi they added to the eel nigiri. Service here was quick and friendly once seated. Sushi chefs kept a very reasonable pace with their preparation and service to what was ordered. They don't validate the parking if you park on the road. They open at 5 PM but I arrived at 4:30 PM and people were already lining up. We waited at 4:30 PM and we were the ninth person there on a Friday night and the tables filled up quickly. We ordered a handful of nigiris but our favorite were the eel hand roll, otoro, hamachi, live ama ebi, monkfish liver hand roll. The live ama abi was so fresh and sweet. If you enjoy shrimp, I highly recommend it. The kanpachi with cherry blossom, was also very fragrant and super soft. We also ordered the Matcha IPA and Yuzu ale. Overall, I think this place was worth the wait. I loved watching the chefs make the dish and sitting at the booth made it a great experience. We came by on a Tuesday around 1 p.m. (attempting to) avoid the lunch crowd since they don't take reservations. We got super lucky and found parking right in front of the restaurant. Tip - Don't scan the QR code in the parking lot. Go inside the restaurant and scan the QR code by the door for free validated parking up to 4 hours. Despite our attempts to avoid the crowd, the place was super packed when we arrived. We waited 20-30 mins to get seated. Despite how normal the exterior looks, the interior looked like a fancy sushi restaurant with 6 chefs giving guests personalized service. The food was amazing. I read this is a must stop for any foodie in Ft Worth, so one weekend when I was in town visiting my best friend, I stopped by alone because he doesn't eat sushi. I came here on a Friday evening just 10 mins after they opened and there was already a 1.5 hr wait for 1 person. They do validate your parking, as long as you don't pay first....and that is for about 4 hours. I ended up getting seated after 1 hr 14 mins, so their estimates are fairly accurate. Most recommend the black cod nigiri, uni plus one nigiri, salmon belly nigiri, and spicy tuna hand roll. Unfortunately, they did not have black cod the day invisited, so I ordered Pomfret nigiri instead to replace that one and order all the other recommended dishes. I can't say I've ever seen pomfret on a sushi menu before, but the chef recommended it. I also added a Toro handroll. Toro handroll - I don't usually order this, but for only 7.50, why not. It's smooth, fatty and the seaweed is nice and fresh. Uni nigiri plus 1 - comes with salmon roe (eggs), quail egg and looks great. Nice combination of flavors. Mana gatsuo (pomfret) - slightly torched, a little texture but a really good nigiri indeed. Salmon belly - this was good but maybe my least favorite since other items were more exotic and I knew what to expect. Spicy tuna handroll w/ shrimp katsu - this was a really good dish. Again, I loved the combination of flavors/textures and the seaweed on these handrolls. Everything was so good, and of course I was still hungry so I tried even more. I added the rosy seabass, (one of their most pricy nigiri), Aori ika (bigfin reef squid), and Ishidai (striped beakfish). Ishidai - this is another I've never had before and it didn't disappoint. This is a darker fish with a little bit of chew. Aori ika - this is definitely slimy, unique and delicious. Maybe not for everyone but I liked it a lot. Rosy seabass - easily the best nigiri, also the most pricy at $14, it just melts in your mouth unlike regular seabass. Probably really fatty too. Glad I ordered this! Like other reviews indicate, these chefs know what they're doing and place the perfect amount of rice on your nigiri, not a ridiculous amount like some other places in town. read more

So many of my friends recommended I tried this place and it definitely did not disappoint. Everything is made right in front of you and the fish is so fresh. You can choose a set of handrolls, add a few on, and/or order some bites of nigiri on the side as well. My favorite was definitely the salmon belly. I love how torching the fish gives it a smokey flavor and the sauce strengthened the umami of the fish. I also got the hokkaido scallop which was sweet and creamy and very fresh. As for the handrolls, my favorite is definitely the salmon, followed by the yellowtail, then the crab, and then the scallop and the toro. The scallop handroll was a bit too heavy for my taste, and the toro handroll just wasn't anything outstanding. Service was great. Super attentive and the waiters were always around to add more to your order, refill your water, or answer any questions. WHAT I ORDERED: 5 handroll combo, Ootoro, Hokkaido Scallop with Chop Toro, Gindara, Salmon with Truffle Ponzu PARKING: Limited parking lot that shares spots with the surrounding businesses. If you use the barcode listed outside at the parking spot, it can no longer be validated and nothing the restaurant can do after the fact. INSIDE: There is a "Today's Specials" board on the wall but it's also posted everyday on their instagram account. Plan on a wait, even if you get there early. Went on a Sunday, got in line at 11:45am but already enough people in front of me where I would be in the next seating. I got on the waitlist at 11:57am and got a text saying a table is ready for me at 1:10pm. Used this time to get a coffee nearby. They don't take reservations and it's about 25 seats at the bar. Service was quick and it's fun watching the chefs prepare each roll/dish. Bathrooms available in the back right. THE FOODS/DRINKS: Expect to drop money but well worth! Everyone I know who's ever visited Hatsuyuki only has the highest praises for this restaurant. And after trying it, I think it's fair to say it has lived up to the hype! I definitely recommend trying to get there a little before they open, because there's usually a line. We arrived about a half hour after they opened. And we were told the wait time would be around an hour. Luckily, there's a lot of shops around the area to walk around and spend the time. Parking isn't too hard to find as there's a lot out in front. But DO NOT SCAN AND PAY YET! If you go into the restaurant, they have a qr code for you to scan and validate your parking for up to 3 hours. If you've already paid outside, there's nothing they can do to help you. I will say, they only have one specials board, and depending on where you're seated, it can be a little hard to read. But I love the method of ordering, you just write in what you want on their paper menus. And they give it back to you once they put the order in, so you can also keep track of what you're eating and what you're still waiting on. The quality of all of the ingredients is pretty top tier, the fish is fresh, the wasabi is ground before your eyes, the rice is perfectly portioned and the perfect texture, etc. And the seaweed was so crisp and fresh too. Honestly, unless you're eating the handrolls, you really don't even need to pour any soy sauce out. Because they've already brushed the fish with the perfect amount of sauce.
