I wanted to plan a birthday dinner at my home and hadn't worked with a private chef before, so I wasn't sure what to expect. The short of it is I was blown away by Frank and his team from start to finish!! Frank was very responsive after my first inquiry and subsequent (read: MANY) requests. He proposed an amazing menu while accommodating several severe allergy requests. I changed the number of guests several times, which he also just rolled with. And then (!), I realized I REQUESTED THE WRONG DATE. A major error on my part. I don't recommend doing that, but Frank was also somehow able to accommodate my date change. I was incredibly grateful for that!! The dinner itself with Chef Charley was INSANELY DELICIOUS. We had an amazing round of starters, followed by a multi-course dinner and dessert. Everything was just SO, SO good. So flavorful. Cooked just perfectly. And there was plenty of food for all of the guests. (I was worried that maybe there wouldn't be generously sized portions, but this was not the case whatsoever.) On top of that, Chef Charley himself was an awesome guy and I really enjoyed working with him. We spoke before the dinner to run through everything, he helped make the dinner layout look gorgeous with some extra props I wasn't even expecting, and his cleanup job was A+. Icing on the cake for an incredibly talented chef!!! I am truly looking forward to my next opportunity to work with Frank, Charley and their team again!

Starting with our initial email exchange about food preferences, allergies and many, many menu ideas, and extending beyond the class to follow-up restaurant and recipe recommendations, the entire experience with Chef Katie was easy, effortless and fun. Everything felt accessible; communicating with Katie felt like chatting with an old friend, the recipes were as realistic as they were delicious -- meaning, we'll actually make them on a weeknight since they don't take hours to prep/use obscure ingredients -- and there was nothing stuffy or transactional about having a professional chef teach a class in our home. No doubt, Katie is as professional as they come. What's more, though, is she is a genuinely good human and a joy to be around. Pha Le comes to my house every Tuesday, does all the grocery shopping, all the cooking, all the cleanup, and portions out all my meals. She has learned my favorites types of meat, favorites types of seasonings, and the perfect portion sizes. Incidentally she also makes the best pho I've ever had.... including the 14 days I spent in Vietnam. I'm moving to Colorado soon and won't be able to use her services, but I will definitely miss her. All the entres are individually packed and LABELED in Laos and English. There is a QR code to link to the heating instructions. For the monthly special (Deep Fried Fish in a tomato sauce) they provide written instruction instructions. I signed up for the monthly subscription which include 3 meals which you can select yourself or let them choose. It's been a while so I picked my favorites- the sweet jerky meal, the pork noodles and the monthly special. As always it is fabulous. More to good news is that there are a number of lower carb options. You can get the jerky and spicy sausages without rice. Or the protein (chicken or fish ) steamed in banana leaves. Or the classic minced chicken salad. Or the spicy red curry. I was told that they specifically selected items that would travel and freeze well. They hit the mark. We originally hired her on for a two week basis plus a holiday brunch menu plan, and then we kept her on for an additional six-and-a-half months because her approach really impressed us. Like, a lot!!! She menu planned, learned our tastes (collaboration was tops!) and executed the needs of many (modifications and substitutions, etc.) seamlessly. She even had our picky eating kid eating vegetables! Alyssa was an absolute pleasure to work with and is so talented in the creation of her flavors, sauces and textures. We even had a menu one week where she brought dishes we missed from a top Chicago eatery to life. If you can dream it, she can make it! If you're regimented and aren't dreaming a lot and just need really good, balanced meals, she is also supremely talented at that kind of output as well. We so missed when she'd visit us and cook in home once COVID-19 hit. During that time she was a lifesaver and delivered meals that rocked our world. Alyssa is so professional and timely in sharing draft menus and is highly responsive and adaptable. She was always on time, always extremely clean and thorough, and she loved to teach us some of the skills she learned in order to prepare such wonderfully thought out meals.
