    I feel that some of the best places in Hutto to eat had already hit their stride before I discovered them. Some of the best food within the small but mighty city limits had already built their names and figured out their keys to success. Happy Panini was originally a food truck before converting to a brick-and-mortar store at the very end of 2024. I lack the knowledge to talk about the original vision of Happy Panini or what the food truck version brought, but I have only three words to say about the B&M version: they understand the vision. Three words. I believe, contextually, that sandwiches fit into two categories: hot sandwiches and cold sandwiches. Both have different intentions and both require different playmakers. Experts in cold sandwiches may not be experts in the science behind hot sandwiches, and vice versa. I typically prefer each in their own sphere. Happy Panini sells exactly what you'd expect from their name: paninis. The location of Happy Panini is this beautiful old Hutto bank converted into their deli and decorated in such a welcoming way. The building has a classic charm with modern touches, really well done by Happy Panini. The owner of the restaurant is super inviting and friendly and seems well established within the Hutto community, making Happy Panini truly feel like a neighborhood sandwich shop and a place you want to support over the sandwich giants. A hot-pressed sandwich with fresh and compact ingredients makes a perfect lunch. I've ordered a few different sandwiches from Happy Panini and each one was A+. Some of my past choices include the Soprano, the Reuben, and the Chipotle Beef, and I could order any of those again and be happy. I feel like there's still plenty to try and explore, so no two visits have felt the same. The bread they use in their paninis is crispy and brings the whole sandwich together in a nice bow. Each time I've ordered a sandwich, it came with a secret sucker. Something they didn't need to do, but something I appreciate and that made me happy. Teehee. Each week, they have a special sandwich just for that week. I have yet to order one, but each option sounds fantastic and I question my ordering choices every time. I went back to Happy Panini earlier this week for lunch and realized they are now serving pasta as well. They might have always been serving pasta, but I missed it until now. Fast pasta is always a secret pleasure, and I'm glad to see Happy Panini diversify their bonds and try different things. I ordered Pasta & Pink Sauce (pink sauce being a secret favorite of mine) and added Italian sausage. I feel that the only letdown would have been not having it with their fantastic sourdough bread, but they include two slices of garlic sourdough to go with the pasta. They have really thought of everything. What's next for Happy Panini if not up? It's a fast and delicious restaurant located in the heart of Hutto, and it's a place I want to personally continue to see succeed and remain a hot spot, because, selfishly, they make one of my favorite lunches in the city.

    I took a short road trip north to Hutto to visit Happy Panini. The restaurant is located on the corner in a small downtown area and has both inside and outside seating. There are a lot of places that say they have a great Cuban ($9.00) sandwich. Sadly, many fail to execute the dish.  Happy Panini's version of this Caribbean classic is the perfect combination of ham, pork, Swiss cheese, pickles, and mustard. The ingredients blended perfectly, held together by a sourdough pressed roll (panini), sourced locally from The New World Bakery in Kyle, Texas.  You will notice the juicy, tender pork when you take your first bite. I also appreciate when a Cuban is not smothered in mustard.  HP is not trying to hide their ingredients. Owner Chris Auditore says the sandwich  is one of his top sellers.  He also recommended trying Mr. BIG ($10.25) and Rocky's Roast Beef ($9.25). Following those recommendations, I also tried the Mr. BIG, which included roast beef, smoked ham, turkey, Genoa salami, and pepperoni with sharp cheddar and provolone cheeses, pickled jalapeños, and chili garlic mayo.  The five-meat behemoth was about 1 1/2 times the Cuban and was packed with flavor.  The mayo and jalapeños hit you after the first bite, but after your taste buds acclimate, all the wonderful meats and cheeses shine through. Happy Panini offers diners options for all their sandwiches.  You can get each selection on a wrap, chaffle, or in a bowl.  For those who dont know, a chaffle is a low-carb egg and cheese version of a waffle. Chris, along with his wife Gina, designed the menu with a nod to the great kitchens of Italy, using fresh ingredients put together in simple dishes.  That's why, in addition to great paninis, you will also find pastas on the menu and side dishes like Caprese ($6) and pasta salads ($2/$4).  They also have homemade milkshakes ($6) I am a sucker for a good pasta salad, and I had to try Happy's version. It had bacon, sweet peas, tri-colored peppers, green onions, and cheese.  Get the small to go along with your sandwich, or the large with half a sandwich, and take the half panini and leftover salad home for another meal. Excellent, well-run family business.  Head up 130 and give them a try. It's worth the trip!

    Wanted to try a food truck on my day off, this place was right near another truck off the main road. They have plenty of chairs if you wanted to sit and eat too. I ordered the panini and it wasn't quick so it was freshly cooked and pressed and not ready made which is great. Good quality amount of ingredients. There are plenty of options for meat and had a vegetarian option too. I wasn't a fan of chips but how can you have a sandwich without chips, I'd try the pasta salad next time. Friendly staff too!

    My absolute favorite and my most recommended Hutto food spot! I order from this local food truck at least once a month for lunch. I've tried nearly all of the menu by now, but my order now is typically the Hello Sunshine panni with the chips and house made yummy French onion dip. Toasted to perfection so that the garlic Parmesan mayo doesn't make the bread soggy. You really can't go wrong with any of the options, you'll get big flavors and feel satisfied! Each of the sandwiches are right around $10 and you get 2 large halves. As a big flavor person the great quality of ingredients they use and the always fresh taste brings me back again and again. The mini caprese salad side (only $4!) is my other go-to side bursting with flavor and refreshing. They typically have a board outside that has recent specials to try as well. The food truck occasionally moves location in downtown Hutto, but always close by East street and the food truck park. Currently they are off of main and 79 (easy to spot on 79 as well!). Each place they park they provide a few picnic tables to dine at or sit and wait for your to-go food. The staff is friendly and makes customers feel like they are happy to see them and really care about your food and experience. Once you order you receive a buzzer and within just a few minutes it buzzes and you can pick-up at the window and have an amazing meal.

    I ordered the Turkey Pesto Chaffel and have to say, it was delicious. The happy panini sits in a little food truck park and rivals any of the best sandwiches in Austin. First of all, the service was friendly and fast, I ordered online and skipped the crowd at the window, which was awesome. When I opened the bag to get the panini in all of its glory, it basically bust itself out of the box to reveal its huge, turkey stuffed deliciousness. It was so big, I shared half with the hubby, even though I would have liked to eat it all. Also, order the chips and onion dip. Yum.

I loved my corned beef, and the potato salad was excellent. The portion size was adequate for the price. My husband was lukewarm on his sandwich choice. We had ice water to drink, at an additional, but IMO unwarranted, charge of 25 cents apiece given we each ordered a meal. It was an efficient and super easy process! My coworker has always raved about the Big Kahuna, so I finally tried it with beef, and wow... it did not disappoint. A hot, flavorful sandwich with jalapeños that packed just the right kick. This was my first time picking up in store instead of delivery, and it was a great experience. The location is clean, bright, and well-organized, with friendly employees and fast service. I also appreciate the option to put a name on each sandwich. It makes it so much easier than opening up each one. Only downside is the limited parking. There are two spots up front and a handicap space. Across from that is a couple of curbside pickup spots and a few regular ones, but the corner parking spots are reserved for the dermatologist office. I came on a Saturday night and I had to park in the dermatologist area. Thankfully they were closed. Overall, great food and great service. I'll definitely be back! I'm already craving my Big Kahuna again. I'm just salivating thinking about it!

However, I have extreme food restrictions, and I did not see anything that I could eat because I am dairy free, processed sugar-free and gluten-free. OK? It was perfect! I loved that she listened to me and she knew that was within my diet restrictions! Haley is a fabulous server. I told Haley that she was so good that I'm going to ask for her to be my server every time. I feel so blessed to find someplace that I can eat comfortably and be so satisfied! It pains me to leave such a low rating (and I rarely do) but this was one of the most disappointing restaurant experiences I've had in a while. And it didn't have to be that way so hopefully my review can grab someone's attention. This place has so much potential because it's in such a cool location -- the band hall of an old high school (fun decor and cool nostalgic vibes). I had really high hopes for this restaurant but it let me down. Here's what went wrong. THE FOOD: First and foremost, the food was disappointing... except for their vegetable appetizers. The fried green tomatoes were fantastic. Nailed it in terms of texture and flavor. My husband and I were both surprised by how good they were. Their Brussels sprouts appetizer was really good as well. After that, it was all downhill. I had the Mom's Meatloaf with two sides: Cowboy Caviar and green beans. The meatloaf wasn't bad but it wasn't exactly a loaf -- it was like meatballs connected together? I didn't taste the bacon in the tomato sauce and the portion felt tiny -- same size as the sides. The sides were a real letdown. The green beans tasted like they came straight from a Jolly Green Giant can. The Cowboy Caviar (which I usually love) was so bland. It was like they just poured beans and corn and pepper and onion in and that's it. I didn't taste any seasoning. Cowboy Caviar needs to have that zing (many simple recipes use Italian salad dressing). Moving onto my husband's dish which was probably the worst part. His tomato soup tasted like marinara sauce but we were hoping the filet mignon would deliver. It was simply not good. It wasn't as tender as filet mignon needs to be -- it was chewy. It did seem to be cooked as requested (medium rare) but it didn't taste good and seemed flavorless -- almost as if the meat was poor quality. Now, I know that filet mignon is a much more mild tasting cut and less flavorful than a ribeye for instance, but still, something felt very off with this steak. Neither of us enjoyed it and that's a bummer (especially at that price point). KIDS: Usually restaurants like this one are more kid-friendly so I was a bit surprised. Our kids are 3.5YO and 2YO. They brought a booster for my youngest. It had no straps at all (which I'm not even complaining about because those straps are broken at literally every restaurant). We were in a booth so it worked okay mostly. What I'm unhappy about is the lack of coloring options and kids menus. We were not brought any crayons and coloring paper upon seating so we inquired. The waitress said she'd look and ended up coming back with crayons and some paper placemats to doodle on? I respect the ingenuity but I was confused. They have crayons on hand but they don't offer them to the kids? What's the deal with that? They didn't have a kids menu printed anywhere and the waitress just told us the offerings out loud. So is there an official kids menu or not? I'd like to be able to see the prices as well. Also a bit perplexing. We went ahead and ordered one grilled cheese for the kids to share and I'm glad because it was big but also not very good. The bread was too dense so it was more of a bread sandwich. My kids weren't that into it. Almost forgot -- the fries that came with the grilled cheese were actually very good (got to give credit where it's due). TIME: Our food took forever. It wasn't a fun wait -- the kids were getting super restless. The waitress stopped by a couple times to tell us that "our food is just around the corner." Even though it ended up being untrue -- I appreciate her checking in.
