I don't think I should give it a 1 but I had it today(out of my budget) and felt ripped off that I could have got something so much better with $13.5 AUD. I got the thick soup because they would run out of it after 3 PM? so I thought #2 would be the option to go to since #1 is with more chashu for more money and #3 is more expensive cause it's spareribs. I just didn't like it at all...from the noodles to the thick broth, it just wasn't good and it honestly felt like a rip off for how much they give too. I will say that I LOVE the free condiments on the side which consist of their garlic sauce, their fried spice with garlic, sesame seeds, and spicy oil. With that said, the soup didn't do it for me as the thick soup made it sticky on my lips...kinda like eating candy/caramel and it kinda leaves a bad feeling if you get it on your lips? I might have to try it again without the thick soup but I really don't want to spend my money here again just to see if it's better...cause it might not be. I like the food court style and it's odd this is where it was...but everything else about it was not good to me...I still want to give it a 1 but maybe #2 wasn't the right option so it's kinda harsh.

In a food mall but oh so authentic

Yelp to the rescue again. I was in Sydney, trying to feed my ramen obsession and yelp pointed me to this place. Did I say how much I love this place? Located in an underground food court near Darling Harbor but so amazing. I walked in and initially thought I was in the wrong place since I never expected such a highly rated restaurant to be located in this random foodcourt. The long line at this stall seemed uncharacteristic of the location, but this just goes to show that the locals know how good this ramen is. All the signs at this stall advertise a traditional Japanese ramen with no msg and I can attest to just how fresh the broth was. You can see the broth going in the small kitchen behind the open window where you place your order. I had the garlic tonkotsu and omg it was divine. Thick, creamy, flavorful and so delicious. The broth is advertised as being thick but I found mine too thick so walked back up to the counter where I saw the Japanese sumo warrior looking chef get some fresh broth off the large rolling boiling pot of broth strain it into a bowl and pour this thinner broth into my thick bowl of broth. The thickness and consistency of the broth was perfect after that. The basic ramen starts at $16 but mine cost $25 with all the extras I just had to have. I got mine with extra bbq pork and eggs and I also ordered some dumplings as an appetizer. When ordering you have the choice of fat or thin noodles and can request extra fat back if that's your preference. If you're bored with just traditional bbq pork as your meat you can add in some pork spareribs or just get the pork spareribs instead of the bbq pork. Extras like pork back fat skewers and dumplings, chili bombs, pickled cabbage and rice can all be ordered as sides or snacks. This is the most popular eating establishment in the food court and it's easy to see why. Ramen flavors available include miso, and tonkotsu in mild and spicy. If in Sydney and craving the best ramen ever, be sure to stop by and give this place a try.

It's a hole in the wall (or should i say "hole in the food court") type of place. I had the #3 tonkatsu with garlic and it was delish! the serving size is quite generous, noodles tasted fresh and the broth was very flavorful. I wouldn't say it's the best ramen i've had, but it's up there with some of my favs. Top 3. I added a soft boiled egg and the texture of the runny egg was perfect! Gumshara is must try if you're ever in sydney. Service was so-so as the girl in the front counter kept messing up our orders, but to make up for it, they gave us a plate full of additional pork for our troubles ;) We got there right when they opened so the line wasn't too bad. Great if you're in the chinatown area and wanted some delicious noodles on a cold day.

The one and only Gumshara Ramen with its thick broth really hits the spot! My friends call this dirty or muddy ramen but this is no BS ramen with all the thick goodness albeit without the savoury taste of MSG. I always have just the good old tonkotsu with egg. I don't see the point of adulterating the ramen to be quite honest. Just the right amount of soup, pork, noodles and condiments. Keep it simple and you know what. Nothing comes close to this in terms of uniqueness so Sydney is pretty lucky. They only take cash so please don't be silly and hold up the entire queue. We are all hungry.

Beautiful. Exquisite. Delicious. Scrumptious. Slurpworthy. Nomworthy. I could go on and on about Gumshara Ramen; it has definitely claimed a special place in my heart. Hidden inside a bustling food court in Chinatown, I was skeptical when our Sydney-native friends told us that Gumshara serves up some of the best ramen in town. But, being the ramen connoisseurs that we are, we had to give them a try. Although it's not the absolute best I've ever had, it certainly delivered above and beyond, and it tasted even better as a remedy for the cold, rainy, wintery day. The tonkotsu broth is thick and packed with tasty meaty flavor, just the way I like it. If you're not a thick broth kind of person, there are options to order a less thick tonkotsu broth. (If you're looking for an authentic experience, though, go for the thick!) You can also order the thick broth to try it, and they can water it down for you afterwards if you find that you don't like it or think it's too rich. I ordered the chashu ramen while the boyfriend ordered the extra large ramen that came with every single piece of meat that they had available packed into a bowl with ramen and thick tonkotsu broth (can you tell he loves meat?). Surprisingly, he managed to finish everything, and I devoured my bowl within minutes. The noodles were perfectly chewy, the soft-boiled egg had a beautiful half-cooked yolk, the chashu was tender, and the broth was bowl-licking good.

When I say delicious, you say ramen! Delicious! Ramen! Delicious! Ramen! In all seriousness, this place is in a little food court, and is clearly one of the more popular stands in the court based on the line of people that's always present and the line that's always longer than others. I've had a couple different ramen bowls here as well as dumplings, and considering I was expecting a nice, greasy, flavorful ramen and dumplings to match, I got exactly what I wanted. Service is quick, which is a major plus, obviously. I've docked a star because of two reasons-- 1: the broth is thick and salty and lesser reason 2: the entire food court and the tray they present the food on is usually not the cleanest. There are sticky stains, which does lessen my appetite.

Good authentic ramen with lots of bone flavour in the broth. You can see the effort they put into it by looking through into the kitchen, real ingredients boiling away for ages. The thick soup was a bit too thick for me and quite salty. They do have a sign that says they can adjust the soup thickness, but you can't really tell until after you have ordered it. I also found the fatty port skewer a bit too salty. Will have to come back and try the regular soup ramen for sure.

I've finally made the walk to 'Food Court' a crazed wilderness of picture menus, Asian food, chopsticks, LOUD NOISES, slurping, burping and all together delicious fun. One might get lost within this Mecca as the choices are varied. Gumshara though was destination numero uno for this Ramen loving pair. We ordered the Spicy Tonkotsu Garlic Ramen with egg and although we were informed that the broth would be think I was not prepared. It was gloriously delicious and I'm glad that we split the bowl. This heavy gravy was so thick my chopsticks were coated. The noodles were tender, bamboo shoots - crunchy and sweet and the egg was still runny. Although i see that Gumshara has been known to be voiced as the #1 Ramen in Sydney - my favourite bowl of pork gold lies within another mecca. Definitely give it a go if you love ramen

My Personal Ramen Tour - Chapter 26 On one of my last days in Sydney, I needed a nice cheat of noodles and Gumshara came up as the closest ramen joint with good reviews. Tucked inside a pretty nice food court with loads of other options, I was having doubts about my ramen choice, but I stuck with my guns and ordered a bowl of normal chashu ramen; http://www.yelp.com/biz_photos/gumshara-ramen-sydney-2?select=OnxnBk54bJpp6MxRJdTmeQ#56OKwoe0Y5j_wstTn8TO-A As others have mentioned, they do a damn fine soft boiled egg. Just runny enough to dip your noodles into, but not too runny to escape into the broth. The broth however was not amazing. Despite the restaurant's name (implying they were frantically working hard on my ramen), the broth was murky in color and lacked the depth I typically enjoy with tonkotsu broth. The noodles were par and had enough chew to them and the pork was fatty enough, but lacked much flavor. Overall it satisfied my ramen craving, but wasn't anything special.

Unfortunately it's been years since I've been to Gumshara. I went last week and was glad to see that they have expanded their thick soup ramen to all sorts of flavours now! I can understand why you might think the thick soup is overwhelming but all I can taste is absolute awesomeness. Food explosion in my mouth! Soup so thick it makes it hard to slurp. Which is good cause I hate the slurping sound.

Often cited as the best ramen in the city (my #2) it's hard to argue with that assessment with the party that goes on in your mouth upon your first bite here. The chashu is SOOO tender and tasty I always order extra. Every. Single. Time. If you order any of the ramen dishes without a soft boiled egg, you should slap yourself out of it, as you are totally depriving yourself of one of the best parts of the ramen ensemble. It would be like going to a costume party without a costume...sure you'd enjoy it but you know something's missing. The only possible gripe with Gumshara is the broth can be quite salty and really rich. If that's not your style you can ask them to water it down a bit or opt for the garlic or shoyu ramen which isn't quite nearly as rich. I'd stay away from their side dishes though, just go next door to Kimama Kitchen for sides...because the egg salad and rice dish is pure nasty. Gumshara...more like Yumshara, right? I'll show myself out...

Pure bliss - tonkotsu + egg + pickles!
    Beth J.

I get obsessive cravings for the ramen at gumshara. I'm not sure if it's healthy... the cravings that is, I don't really care about the dietary value of the food. This isn't one of those noodle dishes where you pick off the toppings and then feel a bit betrayed by the boring soup and noodles. Every singly rich, thick, soupy, porky, chewy, salty mouthful of ramen here is as satisfying as the last. The must do's are: - get the soft boiled egg - top with loads of pickles (including the pickled garlic, it really packs a punch)and sesame seeds - don't fuss the staff. Don't ask questions. Know what you want and order it like a pro - get a beer from the food court bar to wash it down You will be in heaven, then you'll feel like you might die from eating it so fast, then you'll want more. Oh no... I want it NOW! Also, don't be put off by the ever-present line. It moves quickly and you won't have to wait too long.

This is the REAL deal. Authentic ramen that you would taste in the alleys of Kyoto. The soup is thick and meaty, the ramen perfectly chewy and there are lots of pork. The soft boiled egg is the crown on top, I don't know how they cook it but it is flavoured with...something, soy perhaps. So if you are a ramen fan, this is where to go and you'll love it. And the portion is large so you'll feel satisfied by the end. I usually get the tonkatsu with the egg and its fab. And where would you find this ramen shop? Surprisingly in a food court in Chinatown, and a pretty dodgy one too. Its the one on the corner on the Liverpool St side opposite Meet Fresh Taiwanese Dessert House. So make your pilgrimage to Gumshara Ramen, close your eyes and pretend you're still in Japan :)
