Loved it! The folks that were working on 11/12/22 were super friendly, helpful, and also made amazing drinks! I had a dirty chai with oat milk that was pretty much perfection, but it was the vegan carrot lox bagel that stole the show. Seriously..... get this! It's the best vegan lox I have ever had! I also greatly appreciate the attention to detail in terms of presentation. Thoughtfully placed little sprigs of fresh dill, fried capers placed in the perfect spot so you get one in every bite, and the chive cream cheese spread as it should be-not too thick. First impression, what a beautiful coffee shop. Two stories, lofted ceilings, bright, airy...much props for great ambience! Also, I love their minimalist drink menu on the wall. Although it's a bit odd they don't have my go to drink on the menu, the classic Americano. Hmmm, perhaps my taste is out of style these days. Anyhow, still successfully ordered one...woohoo! They had a pretty decent selection of baked goods, mostly gluten free options, but I managed to grab the last blueberry muffin from Fleur De Lis Bakery. They seem to have a good amount of fresh food options too, so might have to come back to try them sometime. Coffee was really good. A barista there actually stopped for a solid 5 minutes to explain their brand ethos of helping some of their partner coffee farms to become sustainable. This summer my sister introduced me to this spot and I've returned several times for various beverages, all of them quite good. I've also enjoyed scones and pastries that they bring in from various local bakeries. This morning, I finally took advantage of one of their breakfast sandwiches prepared on site and...5 stars. Best breakfast sandwich I've had in Portland in years. I had the Miracle Max which is runny egg, greens, lemon preserves, pecorino and scallions, I think. A decade ago, I was a huge fan of the YOLK food cart (long-gone, sadly, it was a cart offshoot of TOAST near Woodstock) and this is right up there with that history of deliciousness. Guilder feels like it was made especially for me, and if I lived any closer to this coffee shop/cafe/cocktail spot, I'd be a definite regular. I'm a mid (ok, ok upper) 30s guy that works remotely for a tech company, has an appreciation for aesthetics and pop culture, and an unhealthy caffeine addiction. In that regard, Guilder checks all my boxes: It's a great place from which to work, with plenty of seating, ample outlets and good light. While the shop is certainly busy, it never feels chaotic and nothing is ever really competing for my attention when I need to just bury my face into my laptop. I love the vibe of the white subway tiles, blonde floor, exposed beams, and industrial touches. Yes, hardly groundbreaking for PDX, but if it ain't broke, don't fix it. My coffee has always been fantastic. Excellent almond milk lattes, solid cold brew, and even a basic cup of coffee more than hits the spot. The only thing I've eaten was the Fred Savage + The Works, which essentially a doctored up avocado toast. The hummus, fried egg and hot sauce make all the difference, and at $6 it's shockingly affordable. There's plenty more that LOOKS really good, but much like Winnie Cooper, I keep going back to Fred Savage. And that last sentence is all the proof you'll need that I'm getting old. Vegan option: I tried the Red Flannel Hash (minus yogurt & egg, add avocado, field roast vegan sausage, and carrot rosemary habanero hot sauce.) Perfectly filling and good mix of flavors. Non-vegan option: Partner tried the Miracle Max Sandwich and added ham. Although it looks huge, the whole sandwich was light yet filling and delicious. Pastries: They serve a lot of vegan pastries. I grabbed the applesauce bread and cereal cookie to go. The cereal cookie has vegan cream cheese between two cookies and was recommended to me as a "flavor explosion in your mouth" - sold! Both were perfect and not too sweet. Service: Employees were so friendly! There's plenty of seating between the two floors and outside tables. The only hiccup for me, even with the avocado superbly ripe and the egg perfectly cooked, was myself wanting just a little extra on the toast. Great addition to the Alameda neighborhood! Super friendly staff and great coffee. The ambiance is calm, clean and comfortable. Great windows to let in the rare yet welcome sun. I ordered a mocha, an almond croissant, and an orange cranberry scone. The pastries were divine. I hesitate to use the word "moist" but they were definitely that. The mocha was subtle, not over powered by sweet or chocolate. The chocolate they use pairs perfectly with their espresso. My friend ordered a red eye and said it to have great aroma and taste. This is one of the best coffee shops in Portland. The food is great, the coffee is top-notch, and the service is awesome. I picked this for a new place for lunch. My main takeaway is that the portions are small. Also, when I get there I realize it's mostly vegan. How did I miss that? After ordering we were told our name would be called when order is ready. Well, one trip up the narrow stairs made me dread picking up my food and walking it up. When I first read articles and saw advertisements for the place, I was just thinking it was going to be another place that was celebrated as "Best" new coffee shop in town or whatever. Coffee was awesome, I don't drink anything too special, I usually get an Americano but it definitely was nice and smooth going down. I ordered a Miracle Max sammich. I wanted sausage but the dude behind the counter said they didn't have sausage but they had vegetarian sausage. Immediately I was like mehhhhhh. He said it's the best kind, Field Roast. OK, I took the bait but I was super skeptical. I asked for tomato ketchup, he said they didn't have any they have home made hot sauce and the sammich had tomato jam. OK... ok. I'm down. Boom! Sammich was the bomb, I'm definitely going back on Sunday. Maybe this will be our regular Sunday spot. The sausage was nowhere near the best, I'm not sure what would be other than a pork sausage but I told him on the way out, I'd give it a 9/10. It was good but it was no meat sausage. I wish people would stop marketing vegetarian food as meat. Someone has to figure that out. As soon as you do that, you're comparing it to the meat version and it just doesn't hold up. The space upstairs is perfect for reading or working, the coffee and pastries are stellar, and I love that it's open later than other coffee shops in the area. Meh. This place hits it's demographic. Parents that were hip not that long ago and are trying to hold onto that last gasp of youth. It's location on the border of Irvington and Alemeda.... Check. It has Portland chic style with incredibly uncomfortable seating.... Check. It has 'adult' food like toast and grain bowls to keep you and your wallet thin.... Check. Sweet faux healthy pastries to keep the kids coming back.... Check. It will be attractive to the neighborhood family or work from home mom that just doesn't have the energy to go to Proud Mary and deal with it's NW 23rd 20 something crowd. Now for specifics on the food. 1. The cereal sandwich was very sweet and had the mouth feel of stale cereal rolled in dough. It was cut in half with a filling that is a slightly viscous version of doughnut glaze. Just to make sure there was enough sugary goodness, marshmallow was also thrown in. 2. The blueberry muffin was fine. Not terrible, but not worth finishing. The blueberries all floated to the top and were far from abundant. Muffin base was moist, but also dense. 3. Breakfast toast is all the rage and Guilder is happy to hop on that train. Too bad the toast wasn't toasted and the egg was broke so it was a slimy mess, which isn't terrible because the ripe avocados saved the day. The accompanying salad was good quality greens, but over salted. I mean it's toast so.... It shouldn't be hard to make something passable and they succeeded in that effort. Definitely passable. 4. The Incredibowl was a hit for my wife, but a miss for me. I'm not a cold grain and bean bowl sort of guy, but was optimistic because I live hummus Given that the hummus was supposed to be mixed in with a bunch of toothy items it probably doesn't matter that is pretty low quality and very chunky. Since it is one ingredient I'd be willing to recommend it to someone who likes that sort of thing, but would also give the caveat that you shouldn't go out of your way to get one. read more

While I find the menu interesting and everything I've eaten so far has been good as well as enjoy the friendly staff I am extremely disappointed by the grandiose ego of this coffee shops hipster baristas. The Baristas are poorly trained and seem to have taken it upon themselves to redefine age old drinks that should be consistent and dependable. I tried to contact Guilder to state my case through the website so not to make it a public forum but not contact information.... I am Italian and have traveled Italy and Europe extensively, I have always been able to depend on a cappuccino being the same exact drink where ever I may have been in the world but suddenly Portland Oregon in their arrogance has taken it upon themselves to redefine the culture of espresso. I am offended that Guilder can't make a dry cappuccino even when specifically asked to, then try to tell me that "this is how it's done at Guilder" as though I was crazy for being disappointed. I ordered a dry Cappuccino, there is only one way it's done, it's been made the exact same way since it's conception and for this little coffee shop in Oregon to be so arrogant as to redefine it is utterly absurd. This is why the Hipster revolution in Portland has ruined our city and now our historical espresso drinks. Guilder need to research... I won't be back for coffee as they don't know how to make a good espresso. PS the barista drew a shot and left it sit for 2.40 minutes while the crema separated and the shot went bad. I was working in the area for many weeks in a row when I found this coffee place, very close to the house I was working at. From then on, it was a regular stop in the afternoon.
