I have been here a handful of times since I work at the building across them. Every time I go I usually get a cold brew with honey syrup and room for cream. I stopped in to do homework one day and got my cold Brew chatted up with one of the workers and sat upstairs. It was very welcoming, the plants gave me a nice warm feeling, the people having conversations were nice and soft. It was. Very peaceful environment and I look forward to going here for my studies. I have never gone here on a day where the workers gave an off vibe, it's always smiles and conversation; I guess that's the perk of having closing early jobs? I also noticed a lot of dogs outside, it's always exciting when we see the dogs outside the coffee shop and you see all kinds and everyone is just happy. read more

I love this place!! Fresh coffee, modern vibe and delicious food! I usually come on Sundays since there isn't a wait for brunch like most places... it's a wonderful casual spot in NE. The food menu is limited but has enough choices where you don't feel overwhelmed. My friend got the breakfast sandwich and I got a modified version of the breakfast burrito... I'm very glad I paid extra for the special green sauce on the side! The upstairs sitting area is comfy and I love the live plants! I love this coffee shop in theory. It's my local haunt, the food is good, the coffee is good and personally everyone has been friendly to me. My partner is literally the nicest human, always tips well, holds doors for strangers, is not American, and he always feels unwelcome here and it freaking sucks. There seems to be a common theme in rudeness from one particular person that works here, and I will double down on that. It's always the same person that is always super shitty. I brought friends here(again from out of the country) and they were both made to feel super uncomfortable and unwelcome. This makes me not want to come here. I had high hopes for this place! But unfortunately, it did not live up to my expectations. When my friends and I were ordering, the cashier looked annoyed and irritated that we did not know what we wanted. It is hard to know what you want when there is only one physical menu available and multiple people in line. It also felt like we were unwelcome and rushed. We were excited to try the food as well but were told that the kitchen closed early. Instead, we tried their coffee and baked goods. The coffee was pretty good. My friends tried their tea drinks and said they tasted like water and was expensive. The baked goods were mediocre and quite spendy. They were small in size and ranged from $5-8. My friend had a small savory croissant that was $7 and could be finished in 3-4 bites. They didn't display the prices for the pastries for a reason. Not worth. I would say though that the location and area is nice. They have an upstairs location, window seating, and outdoor seating. A great place to study or catch up with friends. So much worse than it used to be. Guilder used to be a whimsical, Princess Bride-themed cafe that, like other good Portland cafes, had incredible coffee and great sustainability credentials. Which is to say the sole differentiator was the Princess Bride theme. Now there are new owners who have raised prices and are taking away the theme and turning it into a coffee shop like any other. They talk about doubling down on quality and sustainability except they now serve meat rather than vegan options (objectively less sustainable), and have raised prices without any perceptible improvement in quality. Bottom Line Up Front: It was annoying when they print and communicate food service is available 8 am to 1pm, and 1:30 pm to 3pm; and we walked in at 1:35 pm and they declined our Food Order. My husband tried to order the Vegetarian Breakfast Burrito with vegan apple sage sausage. And, the person serving us stated they can only ring up orders when their kitchen staff is back from the break, and they couldn't even ring us up. *Not we were in the 1:30 pm to 3 pm range. I was staring at a clock over the person-ringing-up-our-order- shoulder that showed 1:35 pm. So, that was annoying. My husband ended up not getting any food there, even though he was planning on looking forward to it all day. I did get the "Spring Miracle Pill" their seasonal Latte, and that was delicious! And, they were able to make it decaf and with oat milk for me so that was really nice. I also ordered one of their ready-made scones prepared by Shoo-Fly Vegan Bakery. It was an Earl Grey Tea & apricot Scone, it was really delicious. I love the ambiance of the space, it is very light and airy and a great space to hang out in. This place is near my house so I have honestly given it the benefit of the doubt, but can no longer not say anything - this place is expensive and I order latte's which by definition are with milk - and I get charged a .50 cent fee for regular milk? Come on? And Tipping has gotten out of control - the defaults are 1,2 and 3 dollars on a 6 dollar cup of coffee? Maybe it is time the owners pay the staff better than rely on me - it is always "just one more question" and then the staff always walks away sheepishly because they feel guilty about it - the argument is that you can choose you own value, but you're playing a game to take advantage which I don't like - if 2 is the average , you are charging 8 dollars for a 12 oz coffee - inlike to have options but I think it is time to move on from this place. I also question whether the owners even share all of tips with staff - with everything electronic, the owner is the only one that knows the details of the tips and doubt they share 100% with their staff - so it just ends up being a way to charge more like 7 for a 12 oz latte read more

I dropped in for the first time this afternoon thinking to have only a cup (preferably a pot) of tea. On impulse, I ordered avocado toast, expecting nothing more than a smear of avocado on a slice of toasted bread. How about a knife-and-fork-requiring thick pierce of slightly toasted bread with half, no 3/4 of an avocado lurking under a haystack of sprouts and slaw, with assorted sweet vegetable pickles on the side? Not easy to eat tidily, but delicious! Enough loose black tea for a pot had been put into a little bag in my cup and left to steep until, by the time it reached me, was as strong and black as coffee. I rescued the tea in its bag and gave it a second brewing later. A nice tea but not especially aromatic. But, hey, they call themselves a coffee place, so... It was a bright, clean, roomy, hard-surfaced space with plain, fresh-looking functional furnishings that hinted at Scandinavia. A flight of open stairs lead to a second level open to the first. It's a bit of a trek for the businesslike servers, so be kind in tipping. The shop is a little beyond the densely commercial strip along that area of Fremont, so parking was easier to find. read more

Short review: Who buys a thriving, beloved, deeply themed neighborhood coffee shop and GETS RID OF THE THEME? The new owners of Guilder do. And not to replace it with something better. To replace it with forgettable, standard coffee shop fare. Long review: This used to be the best coffee shop in town. Why? 1)A short but unforgettable menu of Princess Bride themed gourmet vegan breakfast items unlike anything you could get anywhere else, and 2)Cost of Production coffee; the owners where actually buying the coffee directly from the farmers. In a word, they were incredibly unique and full of care at every level. I've literally dreamed about the roasted tomato veggie sausage sandwich, have had extended conversations with other foodies about how great the food was here, and have asked for sauce recipes from the chef. Apparently Guilder sold and the new owners had the bright idea to replace the menu with bland, forgettable standard coffee shop fare. "A breakfast burrito." "A Lox Bagel." Both utterly bland and forgettable, and now...with REAL MEAT! Um... what. This doesn't suggest to me that the deeper, equally important second thing that made this place great is not being changed as well. I won't be surprised if they paint over Andre next. Dear new owners: what are you thinking?! I'll walk buy again and see if you came to your senses but... otherwise, Guilder is dead, and we should all mourn it. "As you wish" - If you've been to Guilder, you'll know exactly why I used this quote to kick off this review! Guilder has a subtle Princess Bride theme running throughout, but not overly extra in its references. This is a beautiful curated space that has a small downstairs and some seating upstairs. It's beautiful in the summer and winter bc the large windows allow a lot of sunlight in, and there are a lot of plants that they use for decoration. The coffee is also delicious. They roast their own beans and do a great job of it. They always have plenty of options to choose from and I really enjoy getting a shot of espresso or a latte here! It's also fun to chat with the baristas, and if lucky, sometimes Mike, their roaster, comes by and is always willing to talk about his coffee. Guilder is on my list of Portland coffee recommendations not just because of its design, but because of its great coffee and hospitality! read more

The ambiance is still great under the new owners. The hours and food, however, are not. The menu removed flavorful options and replaced them with bland, forgettable ones. Food prices went up. For 9.50, you could get a delicious breakfast burrito with eggs, avocado, stewed black beans, roasted peppers, roasted potatoes, onions, pico de gallo, sour cream, and cheddar cheese, with the option for adding vegan apple sage or chipotle sausage (2.25 up charge for the sausage-was totally worth it). Now, for 10.00, you get a bland, forgettable, breakfast burrito with eggs, potatoes, and maybe onion. I say maybe on the onion because I think I saw one but I didn't taste it. For a 2.00 up charge, you can get two small chunks of avocado added. Ditch the pickled veggie garnishes and bring back the ingredients that mattered. Guilder used to be a great place for work groups or outings with my husband. The new iteration is disappointing. Please reconsider the changes you have made. read more

This place has great coffee but a really sour staff. I've been a few times and ordered probably 6-7 of the drinks on the menu. Every drink has had smooth espresso and great complex flavor. The big problem is the staff. Each time I've been there I've been treated kind of weirdly. Once I was waiting at the counter for a few minutes while the counter staff were chatting. I wasn't upset about that and was happy to wait but then when the barista did come over to take my order they acted like I had done something terrible by coming up to the counter to order. I honestly felt like she wanted me to ... leave? Another time I ordered an iced latte and the barista gave me just the most scorn filled look. I know iced is not the best way to enjoy great espresso but it was 90 degrees out and I just wanted a tasty iced espresso without judgement. read more

I've been in or really outside Guilder for coffee during Covid so today we decided to try dining in, since things are opening up. The space is airy & light-filled but the seating is obviously not intended for comfort or longish stays. There is no table service & customers are expected to bus their own tables per the table signage as well as tip beforehand, which is so very Portland. I had the Avocado Toast & maybe I didn't read the fine print but from the reviews, I presumed it came with an egg. Unfortunately, it didn't & had the 'toast' been actual toasted bread- this dish would've been a lot better. Sad to say, the bread was dry, grainy, crumbly & needed salt. My partner had the veggie burrito which was pretty tasty. The coffee continues to be the highlight & I will definitely come back for that -just not for breakfast. read more

Guilder has been on my list to visit for a while. I will start off this review saying I did not grow up watching The Princess Bride, so I'm not obsessed like everyone else. The set up for ordering here is pretty good as far as socially distancing. I ordered an oat milk latte and it was yummy. My friend was excited about their hipster Princess Bride portraits. The food sounds good here, but we did not order anything to eat while here. I think i'd like to come back here when covid isn't stopping us for sitting in coffee shops. I've been in twice. I do not get a welcoming vibe--a default tacit hostility is closer. I also get the definite impression that the customer is to conform to the wishes of the waitstaff, first and foremost. This is rare in this type of coffeehouse. I don't find it at the Peet's on NE 15th & Broadway, at Barista or the other coffeehouses on NE Alberta, at Fleur de Lis in Hollywood, Cafe Destino down the street on NE Fremont (about 10 blocks west), or St. Simon on NE Broadway. All have coffee equally as good as Guilder. While Guilder is certainly the most convenient to my home on the ridge, I need to feel that I am at least recognized as a potentially positive individual, rather than a potential enemy. I hope the owners get this sorted out because I'd otherwise want to patronize the business, since I could easily walk there. I'll go to the other coffeehouses--more trouble, but less hostile. Literally the fussiest coffee shop I have ever been to. Don't stand in the wrong place. They will talk to you. Try to have a meeting on your laptop, they will talk to you. I was thrown out for not having headphones even though I am having a one on one conversation on my laptop, just like everyone else next to me. Went in and am greeted by a buzz cut haircut lady mean mugging the whole time and giving dirty look. Not sure if it was because I forgot to bring a COVID mask (while me and my partner are fully vaccinated) nevertheless we both wear masks covering our nose and mouth. I order my food and am respectful the whole time. Even while leaving a tip for my order, the mean mugging continues. As I'm wearing my COVID mask, 6 feet away from others I take it off to try the coffee and have a few sips. I put my mask back on when I am not drinking my beverage, just waiting for my food again. I am greeted again by the same lady that mean mugged me the moment I walked into the door. She tells me you have to go upstairs to drink your coffee. Then she says we will leave your food downstairs on the table and you can come down and pick it up How about you take your lazy ass and bring the food upstairs, which is part of the service experience? It's July 2021, if you can't even do that then don't offer service or tip as an option or be upset if people don't tip you. The food here is not only delicious, it is beautiful! The way it is plated is artistic and adds to the enjoyment of the wholesome healthy food. I got a bowl and the added little bits of fresh dill to make something great even greater! The lattes are excellent too.
