Hubby has been wanting to get to Gil's for a while so he went and brought me and Mom lunch. We all got the 1/2 pound burgers with different toppings. Me and Mom should have had no mayo but it was on there. It didn't ruin it for me but I really don't care for mayo. I had onion rings and hubby had gator tots. I took a picture of the onion rings because I couldn't find one. They were pretty good, and tater tots were ok. Finally, they had their rolls but one get one so Mom and Hubby enjoyed them. There was one guy working the whole thing and he remained friendly while prompt with orders/preparing. We were just visiting the city for day and looking for a place to get breakfast. My husband happen to notice this place and walked in to check out what they had in the menu. He came out with a Manske roll in his hand. I believe the owner gave it to him for free just to try it. He let me try it too and my god it was the most delicious pastry I ever tasted!! So buttery, soft and warm and melts in your mouth. I immediately went back to buy more. Just for the record, I am a picky eater and quality is utmost to me . I also have traveled 23 countries and have been to thousands of pastry shops in the world. This one by far was my favorite desert I ever tasted. It may be because they used real butter instead of synthetic disgusting palm oils. I will definitely be going back to this place every time we are nearby. Gil's is the quintessential college burger joint. It seems to have been serving students in San Marcos thru at least two or three name changes. My sons have been raving about this place for years and I finally got a chance to check it out. The restaurant is very narrow and long. You enter and the left half is the counter/kitchen and the right half is seating. In the back, the left half is a bar and the right more seating. When you enter, immediately make a left and order off the monitors at the top of the wall. Make sure you check out the specials on the counter. Almost always a 1/4 burger, fries and drink. I ordered the Hickory Burger combo. They come in 1/4 pound increments. Each 1/4 adds another patty. I was a dope and ordered a 1/2 pounder. That was WAY too much and I'm a big buy. Trust me, stick with the 1/4 pounder. The Hickory burger came with some sort of Hickory BBQ sauce that was great, melted cheese that was just perfectly melted and a few stray grilled onions. The bun was toasted to perfection. This place knows how to cook a burger! The side of fries were very tasty. Not the normal bland stuff. With a self-serve fountain drink, this was a deal made in heaven and the reason most college students are so loyal. Got recommendation to eat here for my nephew's 15th birthday. This was a perfect spot for a bunch of kids and plenty of food. Walked around the square first and stepped in to order at the counter. Not crowded, but steady flow of customers thru the night. The guy at the counter was helpful taking orders for 8 people. They have daily specials and we got a bunch of burgers, fries, mozzarella sticks, chili fries and rolls. Went to the back and there was a long table to sit at for the party. Everyone enjoyed the food and the rolls were a hit. It is an unusual set up and looked to be an old bar, but their beer selection is weak. Just bottles with not many options. The bathroom also needs some updates and work to stop a wet floor. Besides these 2 below average, I would recommend if looking for a good burger. My second visit to Gil's. This holds claim to being the oldest operating restaurant in San Marcos. My first visit about 5 years ago was good, the burgers were really good. They are famous for the Manske Rolls. A cinnamon roll. I bought two cartons - and they were a bit pricy. $21 for 8 cinnamon rolls. Recommended to put in the microwave for 30 seconds. Ours is quite powerful (1200 watts) and 30 seconds was too long. I recommend starting at 20 seconds and see how that works. Great rolls, try them! read more

We saw this place on Texas Country Reporter and knew we had to give it a try. We went at an off peak eating time, so you would think that there would not be a crowd. We were wrong. Gil's is old, like my dad coulda eaten here while half procuring an edumacation in whatever hell they called the college in those days. Southern Redneck State I think? He told stories of filling dorm rooms with goats off the side of the road; his buddy that had the only glass eye on campus. Dropping it inside unsuspecting buddies beer mugs when the weren't looking. Raccoons and possums tossed in the bathrooms and the light bulbs removed; just your average country mayhem circa 1950's. Today while visiting San Marcos I decided to hit up Gil's Broiler. Mom and dad had mentioned the semi famous Manske Roll over the years so I had to give it a try. By no means a comfortable destination; Miller High Life on draft among other plumbers' beer contenders. Quite a memorable experience. I give an A for effort when they could have provided better service. I picked the Gil-a-monster which came with a "special" sauce, I detected just mayo so I don't think I got what I actually ordered. Mom tried a cheeseburger with sweet potato fries and I rounded out the meal opting for onion rings, the Texas Country Reporter approved Manske roll for dessert. Amazingly our 1/4lb choices arrived a bit pink in the middle so I really appreciate the cooks not over killing something thats already dead. Slightly stingy on the tomato slices (1 thin slice of roma), quite lovely caramelized onions, with a properly cooked patty places Gil's above the standard fast food curve especially in a college town. Minimal complaints included my missing beer having to ask for it after we received our food. BTW, the Manske Roll is worth the calories. They even offer it topped with bacon!
