We immediately started causing trouble by asking if they could take the pumpkin spice pancake batter and turn it into a waffle. They said yes--and it was AWESOME. The only mistake was ours: we should have asked for it extra crispy. Pumpkin-spice waffle absolutely needs to become a permanent thing. Then came my Country Big Boy, and whoever decided fried green tomatoes, cheese grits, and a biscuit smothered in gravy belonged together deserves some sort of breakfast medal. Seriously: EVERY RESTAURANT SHOULD HAVE THIS COMBINATION. The fried green tomatoes gave you that crispy, tangy bite, the cheese grits were rich and comforting, and then you've got a gravy-covered biscuit sitting there basically daring you to accomplish anything productive for the rest of the day. This is Texas breakfast food behaving exactly as Texas breakfast food should. We also tried an omelette, and it was HUGE and beautifully fluffy. My one odd complaint: the bacon inside wasn't really rendered. It almost seemed like it had been cooked along with the omelette rather than cooked first and then added, so the texture wasn't quite right. Easy fix, and definitely not enough to overshadow everything else they did well. Service was another bright spot. Our waitress was quick, efficient, kept everything moving, and handled our pumpkin-waffle experimentation without blinking. And I really like that this is locally owned. It's not another interchangeable breakfast chain serving the exact same plate you can get in 400 other towns. They're doing some different things, the portions are substantial, and they're willing to accommodate a request that resulted in one heck of a waffle. So yes, even with my bacon nitpick, I'm giving them five stars. Next time: Country Big Boy again, pumpkin waffle EXTRA CRISPY, and absolutely no plans requiring physical activity afterward. 5 STARS EASY... and #ShopLocal!
