We came by Gaucho on a previous night around 7pm it was swamped with people. If you want to try Gaucho, come early and be brave and just dive in. We came for lunch the next day and it was more manageable. We bucked up and dove in. We learned that the drill is to find a table or bar space and order drinks, then peruse the tapa offerings along the bar. You pay when you've ordered the items you want. When you want more, you return to the bar, get more and pay. Tables are precious, but they do turn over so just be patient. The folks behind the bar get busy. If you speak Spanish, you can get their attention more easily. If not, don't be shy, signal you are ready to order. The staff is there to move customers, so be quick about decisions. They do understand and speak some English though there's not much chatting going on. This was some of the best tapas we've had on the the trip and we went to Madrid and San Sebastian. We just picked things that looked interesting not knowing what they were. Everything was delicious. Several items were creamy and rich like the crispy duck, crispy spinach and shrimp, and the sea urchin. The foie gras was cooked just enough to brown but still had plenty of melty richness. We had everything plus 4 beers for about $57. It's a great place and definitely worth a visit if you're in Pamplona. read more

Wow! This place is excellent. The service was helpful, fast, and great. Even on a Sunday in winter, they were crowded. They're on a side from Calle Estefata where all the popular tapas bars are. I wanted to try their eggs and truffles, but the bartender told me that they have pork, which I don't eat. There are plenty of seafood options, but the highlight, and what everyone was getting - was the Foie gras! It was unbelievably good. I also had a filo pouch with duck (pato), which was also amazing! They do not serve a full menu during San Fermin, I really wanted to try the Caramelo Crujiente de Espinacas y Gambas but they dont offer it right now during the festival. The Croqueta de Txistorra and Frito de Roquefort were not very good at all. My gf not I could finish either of them. The Frito de Gamba and Frito de Pimento were very good though. The menu doesn't say that the Frito de Pimento contains meat, but it has some type of sausage in it. read more

No idea why there are not 10k reviews for this place. It is Amazing. The foie gras was over the top. I have had this all over and never this good. It was served on a perfectly toasted baguette with olive oil and topped with sea salt, barely seared to just melt in your mouth. MY GOD. This was my very first pinxos/tapas experience, and it honestly made every other tapa/pinxos experience overshadowed by this place. It's very near the famous large square in Pamplona. ...honestly, all the food is now a blur in my mind... a calorie laden, wine soaked blur, and it was damn crowded in there- FOR A REASON. In the midst of this hazy blur, I remember a few things... ...a little toast with fish, little mustard seeds and flower petals. Delicate. ...a sea urchin filled with a divine puree of urchin, cream and who the hell knows what else, but it was freaking decadent and awesome. ...a tiny mason jar with little micro fries, a small egg and some sort of cream based sauce and bread to dip it in... Wow, what a great place. Gaucho is set up similarly to most of the other pinxto bars in Pamplona with a large bar showcasing a number of pinxtos. It's located just around a block off the main square in the old town on a small pedestrian street. We went on a Wednesday evening and it was busy though not too crazy. We were able to get a spot standing at the bar which was perfect to try a variety of pinxtos. We spoke with one of the guys behind the counter and asked for 5 or 6 pinxtos each, that were typical and the best. He asked how hungry we were and that was all he needed. We had without a doubt the best food I've had in Pamplona. I would not miss the 80 degree egg and mushrooms, which I thought was the best of the pinxtos, but other standouts included a simple tomato pinxto paired with fish, and their specialty, foie gras fried and on a piece of toasted bread. Everything was delicious and the hosts were gracious. Very willing to make as much or as little suggestion as you want. Prices reasonable with enough delicious pinxtos to fill me and a bunch of beer for less than 15 euros per person. I think what I enjoyed most about Gaucho was that everyone in the place seemed local. I'm currently in Pamplona in January which is not the popular time to visit (most tourists coming in July for San Fermin), but I hope this place maintains its authenticity throughout the year (I'm pretty confident it does!). A few helpful tips. We were the only English speakers in the place the night we went. I'm nearly fluent in Spanish so we didn't have a problem, though I don't know how much English the bartenders actually speak. Thursday nights are 1/2 price pinxtos and Thursday, Friday, and Saturdays get VERY busy here. Plan to stand at one of the outside tables if you come one of those nights. read more

Absolutely incredible. I wish I could hop on a plane and visit Gaucho again right now. Kim Kardashian flew to Paris for cheesecake, so why can't I fly to Pamplona for tapas?! I lived in Sevilla for three months and ate as many tapas as I possibly could so I'm basically an aficionado. Gaucho takes it to a whole other level. I could not get enough of Gaucho's tapas. Unfortunately, time has passed and it's difficult for me to remember the tapas specifically but I'll never forget their deliciousness. Every single plate was unique and divine - and visually beautiful. We kept going back for more and more. We were lucky enough to beat the crowd and get a small table right outside. The restaurant itself is very small and quant, but most guests are still happy standing outside or cramming in wherever possible. We drank and ate until we couldn't anymore. The sun set and the street/area was packed with people full of life - excellent setting for people watching and lovely conversation. Still to this day, my parents and I rave about our wonderful evening at Gaucho and crave their amazing tapas. Go here and try as many as you can. You won't be disappointed. read more

Here comes my bias review: I LOVE GAUCHO!!! Vincent and Marga are the absolute best. We travel to Spain and have fallen in love with not only the bar but all of the employees. Yes lots of favoritism for Vincent the Aussie who is probably the nicest guy in all of Europe. And Marga, cute as all hell who blushes when trying to speak English. Although Marga speaks insanely fast Spanish that you may fumble over and not understand that's ok because all you can do is smile at Marga and say awww Marga you're so cute, haha!!! Love gaucho! I know some others rave about this place, but to me it's crazy place, I just can't be bothered with the pushing n shoving just to get to the bar! And if you think you are lucky to be sitting at the bar, then you will have to put up with people virtually climbing over you to order their food; then you have to to take a chance ....... will they be spilling their beer over you, or dropping parts of their pintxos on top of you, when they are taking their food back to their seat, or will they be standing virtually on top of you from behind, you with your fingers crossed again hoping their beer and their pintxos will not be landing on top of you, while they have their beer in one hand and try somehow eat their pintxos out of their other hand! Look this crazy process seems to be something the Spanish and some tourists like, but to me there are others more civilised places to go to have a beer n enjoy some pintxos! Personally I just can't be bothered !!! Last comment, another thing which annoys me, if you are out on the footpath, is that it seems everyone smokes n it seems they feel they have to blow their smoke all over you, then it's the cigarette butts chucked on the ground along with the paper tissues, all this does not make me very excited to be eating pintxos at this place!! read more

Gaucho Bar was one of the best highlights of my trip to Spain. This place came highly recommend by locals. They charge a very affordable 3 euro per pixto, but this place is not a hole in the wall. This is a gourmet, well-crafted, award winning tapas dining establishment. The bartenders are very friendly, funny and really care you have an excellent experience there. They have a rotating selection of 15-20 pixtos for lunch and dinner out of a total 170 pixtos. You can even buy their cookbook featuring erotic pictures of their lineup of pixtos. I ate here 3 times within a 48 hour period trying 30 pixtos. Each one was amazing because of the freshness of the ingredients and its presentation. The kitchen also offers several made-to-order pixtos. Must try dishes include the orgasmic made-to-order Foie Gras, the creamy Sea Urchin Bisque and the sinful Deviled Eggs. read more

Vincent the Aussie bartender was so helpful in describing the tapas. We had about 5 tapas between the 2 of us. ALL were delicious and with a couple glasses of wine that was dinner.
