It could have had some more meat on it but the owner and I talked and we both know the butchers these days are cutting them a little to close. There was plenty of fat under the bark, but the meat itself was like shoe leather. There was smoky flavor, but it stayed with the meat that refused to release its grip on the bone. The two plates cost over $50 and it was the worst 50 bucks I've ever spent on food. Absolutely the worst beef ribs I've EVER come across. AVOID THE BEEF RIBS AT SILVERADO.
