We spent a month in Denmark and Sweden. Galst Bakeri has the best cardamom buns we had on the entire trip. These are traditional Swedish pastries, but even Swedes will concede that Danish pastry chefs are terrific.
They're called "kardemummabullar" in Swedish, and "kardemommesnurre" in Danish. But all you have to do is
1. get to the bakery before they run out
2. say cardamom in English, and
3. hold up the correct number of fingers.
And the best we found were at Galst Bakery in Copenhagen.
There are loads of bakeries in the neighborhood. Some are larger. Some are fancier. But Galst wins hands down on cardamom bus.
Funny story: My wife's cousin in Canada knew Galst through Instagram and recommended it even though he had never been to Denmark. It's a 10 minute walk from Østerport Station and close to the US (and Russian) Embassy. Peter, the baker, came out to talk to us. Since it was Sunday midday, they were done baking for the day but he invited us to come back on Wednesday morning and tour the bakery behind free scenes. Galatea is closed Monday-Tuesday. read more
