I actually went as far as double checking on reddit and the votes were definitely in! This place seemed legit so I had to try it. It's located in a shopping plaza so there is plenty of parking. There are several restaurants in the area, while Niko Niko is tucked away near the water fountains out front. As I arrived, they quickly sat me at the bar area and my typical rainbow roll and I tried their snow cone roll. The rolls were so good and the fish was fresh! I loved the sweet sauce that was added to the snow cone roll. After about 20 mins, the chef, who's name is Yaser, started asking me what my favorite fish is and why I like it. I told him Albacore and he instantly makes me some concoction with ponzu sauce which was fire. He then asked me if I like salmon and I told him yes and he makes me a seared salmon roll with orange sauce and pepper. By this time I'm stuffed but enjoying this experience. He made going to a sushi restaurant interesting again like when I first tried sushi. We start talking about Japan and he ask me if I ever had salmon skin. I tell him absolutely not and that when I bake salmon I usually take the skin off. He then tells me that I HAVE to try a salmon skin handroll so I figured I should just go with it. My mind was blown!! I actually like salmon skin lol. It was so good! Overall, I had an amazing experience at Niko Niko and Chef Yaser. I left him a generous tip for the experience and he changed the way I will forever dine at a sushi bar now. I sensed something exciting was going to happen -- but relying entirely on word of mouth. Flash-forward to early 2026, where readers of the local weekly paper named this the Best Sushi of Redlands. I was so excited, and as my visit last week demonstrates -- things have only improved. KYO SUSHI was packed at 5PM on a Tuesday. Not only slammed, but standing room only. I don't know what happened but I'm so happy for them. Two subtle changes have happened and I'm all for them. A LOCAL NEWS channel sharing dreadful stories on the TV has been swapped for hi-def reels of lovely Asian spots, making our escape from the crazy world we live in complete. As an extra touch, we are now treated to soothing jazz, which helps in a room with so many happy customers. A special shout out to Sia, who greets regulars like family and will help you get exactly what you need. Hi to Wendy and the new young lady, all keeping a close eye on customer happiness. I believe KYO is on the brink of having outgrown this location, but a lease is likely keeping them there for a while. The roll presentation was very good, and visually the food looked great. The plates came out clean, colorful, and nicely arranged. Flavor-wise though, the rolls were fairly bland. The house mayo tasted like regular mayo, which isn't necessarily bad, but I guess I was expecting something with a little more going on, maybe closer to a spicy mayo or some kind of signature sauce. We also ordered a Philly roll, but were brought the Philly "Pro" instead. The Pro is deep fried, which I wasn't expecting, and I took a bite without realizing how hot it was and almost burned my mouth. I did mention that "Philly roll" and "Philly Pro" are close enough in name that I could see wrong orders happening pretty easily. Service was direct and decent. Nothing bad, just more to-the-point than warm or memorable. I'd probably give this place another shot, because it seemed like we may have gotten caught in a rush all at once. Not terrible by any means, and the presentation was definitely a strong point, but it wasn't quite the standout experience I was expecting.

When we arrived, the hostess attempted to seat us at a table that would not have comfortably accommodated our group. I politely asked if we could be seated at a nearby table that had more space. In response, she rolled her eyes and let out an audible sigh, which felt unprofessional and dismissive. When we were eventually seated at the requested table, she placed the menus down abruptly and did not hand one to me directly, instead leaving it at the end of the table. The interaction came across as unnecessarily rude and, frankly, not in line with the level of service I would expect from a hostess. That said, I want to note that the rest of our experience was positive. Our server was friendly, attentive, and provided excellent service throughout our meal. The food itself was also very good (I would not recommend the orange chicken though) and something I would return for. I hope management takes the opportunity to address the front-of-house experience, as first impressions matter and can significantly impact a guest's overall perception. First thing I noticed were 2 Japanese ladies eating inside. Good sign! Was clean, plenty of seating, liked the solid granite tables. The "new" owner is this young guy who bought the place 3 years ago when the previous owner retired. He was working hard as the only waiter and 2 chefs in the back and bar. For lunch, i had the 12-pc sashimi (all fish) for $20...did I say 11 pieces?!? Man it was totemo Oishikatta!!! Probably some of the best sashimi I've had outside of Tokyo. Even my Japanese Nihonjin partner agreed it was very good (and she's a picky Japanese eater!). I liked that it was all fish cuts so I didn't have to sub or ask for sub for seafood I don't eat (bottom-dwellers, scavenger seafood). Shihoko-san had the salmon bento box and it was also very tasty.
