As a result of Fiesta Mexicana closing down we did the next best thing and started going to The Big Mexican Rancho in Gymea Bay! The Big Mexican Rancho is a family business, owned and operated by Javier and Nelcy Rojas and has existed in its current location for over 20 years. We came here as a family quite a few times growing up but always preferred the food at Fiesta Mexicana. Transitioning back to The Big Mexican Rancho was however, super easy as I have a sneaky suspicion that some of the cooks from Fiesta Mexicana are now working here because the food is PHENOMENAL! The food here is clean & surprisingly vibrant. I found the menu to possess a unique imaginative flare; a welcome salute to modern Mexican cuisine. My friend & I dined here for lunch, both ordering the Chef prepared Lunch Board for a cool $16. We also ordered a starter of Salmon Ceviche to share. The Lunch Board included 2 tacos of our choice (we both opted for the slow braised pork), one of their famous corn lollipops, guacamole, salsa, sour cream & serving of their three bean dip, finished with a serve of corn chips. I understand the construction going ahead but overall Prince hotel has lowered it's standard. Used to love going there for food and kids play area. Only thing I can rave about it now is they have the best beer on tap - mountain culture status quo.
