The Tex-Mex options here involve your normies such as enchiladas, quesadillas, burritos, fajitas, nachos, and tacos. All of these (or a combination of these) are part of the express lunch menu which is what we usually order. Most of the time, people in our group get some sort of enchiladas with the favorites being the avocado or the verde due to the sauces and cheesiness mixed in.
