PROPER, proper, PROPER craft cocktail bar. I'm so glad my brother-in-law and I stumbled here on a sleepy Tuesday night, as I always seek out cool cocktail bars when I visit a new city and this spot was on my radar for a few nights. We stopped by Hoppy Corner for a high ABV beer right before their closing and came here around midnight. If we came on a weekend night we'd probably be rejected at the door, but the bouncer quickly waived us in when he saw it was just us two.
This tiny hidden speakeasy was pretty crowded, and upon walking through the heavy velvet drapes there was a humid warmth in the air, probably a byproduct of the straight fire that was coming out from behind the bar. There's one bartender here in a minuscule work space, and on this night this cocktail slinging maniac was busting his ass off mixing up amazing cocktail after cocktail at breakneck speed. Perhaps he was high on amphetamine, but it's more than likely he's just really incredible at his craft. I love watching guys like this work behind the stick, a true being of passion who brings joy to the countless spirit loving patrons that are lucky enough to sip on their expertly executed libations. Respect! The space is the quintessential speakeasy; very tight and dimly lit, with a minimalist yet sleek décor with juxtaposition abound. The modern dimly lit chandeliers contrasting against the worn, 150+ year old exposed brick walls with the thick wood beams jutting out and showing their extreme weathered age. A skinny bearded DJ was situated behind an old stand-up piano, mixing up eclectic beats of old school American hip-hop to French hip-hop/dance music on his Apple laptop. Pretty much the perfect watering hole setting for me!
I scanned the cocktail list for the sole American whiskey based drink on there, I forget the name but it used Rittenhouse Rye as the main spirit and was served cold over a tall glass of ice. It reminded me of a refreshing, celery juice bloody mary and was perfect intro and cooling agent as I was sweating up a storm immediately upon entering! This drink wasn't nearly as boozy as I like it (I'm a barrel proof bourbon neat drinker over here!), so for our second round we opted for the litmus test of any good bar tender, the classic Old Fashioned. I spotted the now discontinued Smooth Ambler Old Scout 7-year rye, so I asked him to use that. Perfectly executed! For our last round I opted for the bartender's choice with the guidance "Whiskey based and BOOZY". And my mixologist idol didn't fail and produced a Japanese whiskey based drink that was boozy AF, while being very complex and delicious to sip on. A true master at his craft!
I tipped the staff 10 euros because we were so pleased with our experience, and the bar-back poured us a couple big departing shots of Buffalo Trace (he asked what I liked to drink and it's a no brainer...bourbon!) We stumbled out of there close to 2am to a majestically beautiful empty cobblestone street in Paris. I had to take a picture which is now my iPhone wallpaper.
