Always patronized Goldberg's Bagels in Pikesville (largest Jewish community in US outside of NYC). They truck their dough down from NYC. Apparently it's the WATER that can't be duplicated. The taste has a slight acidic bite to it. So without NYC water, I think this is as good as it gets. Einstein Bagels too bready, weak crust. I bet they are baked off site, frozen and delivered. Rich's bagels are terrible. Feldman's are very good, but not as good as these. p.s. Bongiorno Bagel in Gilbert AZ has a "New York Watermaker" in the shop, whatever that is. But their bagels are too puffy; to much proof time.
