Their to go lechon is excellent as you get newly roasted lechon, juicy meat, tasty crunchy skin, the great taste that only freshly cooked food can deliver. Eating lechon in their restaurant can be disappointing because you may get previous day's unsold meat or a mix of fresh and old meat topped with nicely crisped tasty skin. I recommend taking off the skin lying loose on top and examine the meat to make sure it is fresh and juicy and not tired, dry, yellowish chunks. If it is the latter, send it back.
If you get what you think you paid for, Elars is very good, so too their other available dishes. Unfortunately bait and switch with lechon that has been sitting around also happens. In which case you'd have paid for substandard fare. The difference between eating in and to go is the lechonero for to go does his chopping and packing within your view, but the lechonero for eating in does his work out of sight. Won't know what you're getting until you lift the skin and look.
