They are the best Mexican food truck in Shelton. Love their Carne Asada fries and nachos.

Last year I knew I would be in Shelton and thought I would have a Mexican meal there. When I did…read moresome research Guadalajara was on my list along with Las Palmas. I ended up going with Las Palmas based on them having stronger reviews. It was good, but I hadn't written off Guadalajara. Today I was back in Shelton and decided to give them a try. Reviews are positive, but photos don't show enough of the menu and since there is no website, it was impossible to know what the offerings were and what they cost. I was there for lunch and from what I recall, there were at least 2 dozen lunch specials ranging in price from $14 - $17. There were two items that you don't see on many lunch menus and both are two of my favorites. Carnitas and Carne Asada. I asked the server which he recommended, and he said I should try the Carnitas. As I anticipated my meal, I tried the salsa, decent, but no better or worse than any other restaurant. I like heat, so I asked if they had some hotter, he smiled and said he would be back. 5 minutes later, he returned with a salsa that looked the same, except some crushed chili flakes had been added. That gave. There is a difference between trying to make something hotter or actually making a hotter salsa. When the food came, the portion was generous, but it also wasn't good. I've mentioned this in many reviews. Carnitas have to be fresh, you can't reheat them and this was reheated. Carnitas is no different than a steak. If you make a steak fresh one day, it won't be tender and juicy the next day if you just place it under the broiler. Truth be told, I was really upset. The server, who honestly appeared to be the owner, knew better, at least the Carne Asada would have been grilled fresh. I didn't eat half of the meal and although he showed concern when I asked for the check, again, you are the restauranteur. Why would you serve leftovers to someone who made clear, they wanted your best plate. I don't live in the area and at this point don't have a reason to return. If they were local to me, I'd give them another roll, most likely at dinner to ensure everything is made fresh, but this Amigo struck out today and he earned the single star I'm leaving on his hacienda.

There is a great lunch menu as well with lost of affordable delicious bites. The dinner menu is more extensive but still affordable relative to other Mexican restaurants in the area. Everything is very good. The fajitas in particular were extremely flavorful and uniquely delicious. There is a full bar as well... though I've yet to try a margarita, but I'm sure I will soon. This spot has become a regular detour for quick, delicious Mexican fare. YUM!

Overpriced. Hidden fees. Average food…read more I usually eat from taco trucks in Puyallup and near Sumner. The prices here at the taco truck by the market compared to trucks in those other two general areas are outrageous! $18 for "birratacos". $7 for sodas (like, a single standard sized orange Fanta in a glass bottle). Still, despite the sticker shock, I decided to play an order and give the place the benefit of the doubt. I paid with a debit card. There's a sign on the taco truck itself that says MasterCard/Visa/etc. cards are accepted. The cashier asked me if I had any cash. I said no. He ran my card but charged me another dollar for the card transaction, I guess. There was no sign posted on or around the front window warning potential customers about this charge. Then, of course, they had me sign a receipt with the option of providing a tip. For the record, I still tipped - not entirely sure for what other than getting nickel and dimed. When my order was ready, he asked if I wanted salsa. I asked politely for green. He gave me one small plastic container. The guest prior received at least three. The food itself was fine. Somewhat soggy and the presentation was apathetic at best, but the flavor was average. Definitely NOT worth the premium price. I can only assume the chainlink fence that surrounds the taco truck is to prevent angry and gypped previous customers from seeking retaliation after closing. I'm kidding, but barely. In review, the prices are exorbitant, the hidden fees are uncomfortable, the service is inconsistent at best, and the food itself is just average. I can confidently say: I will not be returning.
