But wait - then they are dredged through some grated Parmesan cheese (this was my mom's secret ingredient for tacos)! They are then topped with chopped onion and cilantro and you must get them with a side of the consommé, which is really a small cup of incredible beef soup! Amazing!! We also tried the horchata - again, the best I've had because it had the perfect amount of cinnamon and was not overly sweet. We also had the Agua Jamaica. Now, I was sad to see they didn't have a lime-cucumber agua fresca, but this refreshing drink was fantastic. Again, not overly sweet with a pleasant unique hibiscus flavor. Wow! Our food was prepared by Sandra (she may be the owner?) and served without a long wait. I know it was prepared to order as it was served fresh & hot. Sandra was very friendly and happy to discuss other menu options. When we go back we must make a point of trying other menu items, but it will be hard to not get more of those tacos! The food truck is very colorful with easy to read menus and is located in a gas station parking lot. Nothing fancy, but it does the job there are two picnic tables so you can eat on site, or bring your food home. What a fantastic find - we look forward to returning soon!
