The toppings were generously piled atop the fish, and tasted very fresh. I took my time savoring my taco. We also had a half order of chips and queso. The queso was thinner than I'd have liked when it was warm, but thickened up as it sat. 2 tacos would likely have been too much food for each of us, so having the chips rounded things out. We appreciated the advice of our waiter. While the menu is limited, the pricing is very good for what you get.

The tasty Salsa Roja and chips wetted our appetite while our tacos were being freshly prepared. The mole taco was better than comparable mole tacos that we've eaten in interior Mexico. Literally the best that we've ever eaten. The Gobenador taco, with the lightly breaded shrimp bursts with flavor. I overcooking here and better than those offered on Mexico's pacific coast. The highly recommended Quesabirria taco melts in your mouth with abundant flavor. The elote was the perfect complement to our tacos, tasting fresh off the grill. No preparation corners here, with even the corn and flour tortillas made freshly in-house. A visit by joint owner/proprietor Erica at our table was a welcomed surprise, providing origins and insights to the unique twists to traditional Mexican tacos that standout above the rest. This is a very scenic and modern upscale restaurant near the heart of downtown Georgetown. The interior is nicely appointed and understatedly elegant. The inside and outside restaurant and bar areas are expansive but easily outstrip the provided parking. There is also street parking nearby, but don't be surprised if you wind up walking from nearby public lots or garages. I can easily see this place being packed. We had a reservation and were promptly seated and offered water service. As with most Mexican restaurants, there's an expansive menu, so we ordered drinks while we perused the menu. I found the Encantada margarita to be quite tasty, but it was a bit expensive. At $11 for a single serving with house liquors, closer to what we've come to expect locally for a Mexican martini (theirs was $18 with house, $24 with call). That's a bit over-the-top IMHO. We were offered complimentary chips and salsa; I remember the chips to be excellent, and the red salsa just right for my taste, but others remarked that it was too spicy. Our waitress (Paulina) joked that the only thing less spicy was their ketchup. They also have a green salsa, which is even spicier, but that we all skipped. The food menu has a lot of chef-inspired offerings. I tried the Grilled Chicken Tacos (Grilled Chicken, Cilantro, Onion, Fresco Cheese) at $16. I had one on flour and one on corn to taste the difference in tortillas with the same ingredients, along with a side bowl of black beans. I found them flavorful but also on the small side for the price. Additional tacos are $5 each. No rice was offered. This was one of their least expensive plates. We had a great time and our drink and food service was nothing less than excellent, but I couldn't help but come away feeling that, for a check that tabbed in just under $100 (with tip) we should have had a fuller tummy. Would we come back? Maybe. We'll have to explore their other options and perhaps graze more off the appetizer menu; however, less than $5 separate most of their appetizers from their plate dinners. This is a place to go for a culinary and visual experience, not an everyday meal.

Our server couldn't have been more friendly and outgoing. She was swamped (it was prom night with lots of formally clad students dining in) but never broke a sweat, never made us feel rushed or unattended and had a big smile from ear to ear throughout. I can't remember her name but I believe she is one of the owners daughters - and she's a real asset to the restaurant. My husband had a combination platter with all the favorites - enchiladas, taco, and a tamale, which he thoroughly enjoyed. I opted for something that was a little less---well, you know----but when in Rome---don't eat the spinach and mushrooms----get the tacos, savor the enchiladas. FAST FACTS: * Parking - lot out from of the building with plenty of spots * Happy Hour - couldn't find updated days and hours but they do have HH specials * Lunch specials from 11 am to 4 pm Monday through Friday SERVICE - We arrived around 6:30 pm on a Monday and they weren't busy at all (although it was Cinco de Mayo and they got busier as the night went on). We were seated right away and had complimentary chips and salsa brought to the table immediately (they're very mediocre). PRICING - The total was $65.45 after tax ($4.99) but before tip for a Burros queso ($10.49), shredded chicken quesadilla ($14.99), Javier's plate ($17.49), and carne asada ($17.49). For basic Tex Mex, it seemed a little overpriced but the portion sizes are good. BURROS QUESO (6/10) - This is a basic chili con queso... it's topped with ground beef, guacamole, and pico but not much. I don't think I'd order this again because it isn't worth it for the price... I'd rather just order a small chili con queso. SHREDDED CHICKEN QUESADILLA (6/10) - It's a pretty standard chicken quesadilla served with shredded lettuce, pico, sour cream, and guacamole. You do get plenty of shredded chicken inside! This is great to split as an appetizer or get as an entree. I'd order this again. JAVIER'S PLATE (6/10) - It's a good portion size but nothing special. The grilled skirt steak had a nice flavor but is kinda hard to cut up and eat. You get rice, beans, and a small tortilla cup with lettuce, pico, and guacamole. I probably wouldn't order this again because I'd rather try other things. CARNE ASADA (6/10) - Again, it's a good portion size but nothing special. This was my first visit to Burros Tex Mex Bar and Grill and I probably won't rush to come back because there are other Tex Mex restaurants nearby that I prefer.
