For the chicken itself, it's very tender and juicy on the inside and still has some of that nice crunch on the outside. Perhaps this is because the cut of meat is the chicken thigh. The portions are serious, the chicken is juicy, and the breading has a great crunch. What really sets them apart for me is the spice. I've had levels 3, 4, and 5, and they're not simply the same seasoning with progressively more heat. Each level actually has a different pepper profile and flavor. Level 3 brings cayenne and Thai chili, level 4 moves into Thai chili and habanero, and level 5 adds habanero and ghost pepper. You can taste the difference, not just feel more burn. The seasoned fries are great too and they definitely don't skimp on the portions. It is a little pricey for a chicken sandwich and fries, but when you see the size and quality of what you're getting, I think it's worth it. Scratch is easily one of my favorite hot chicken spots.
