We went on to talk about difference aspects of their cleavers. The pros and cons of a wooden vs. metal handle. How to pick a size that matches the size of the person. Sharpening angle of the blade. Stamped vs forged steel. On every topic, the storekeeper was to the point and patient. It was clear that she knows their products well. She even helped me look for a cleaver that has their older, stamped logo instead of the newer laser etched one. The ceramic bowls tempted me, but in the end, I figured I don't have reusable plastic deep bowls at home. Only 2 for $5 and made in Japan! Now I don't need to worry about chipping one again.
