We started with the pork belly appetizer which was recommended and stated on the menu indicating it's their featured dish. It was the biggest disappointment as it was extremely fatty with large chunks of fat, while the lean portions were dry. It didn't look very appetizing. The dumplings were just okay--they had decent flavor but I was hoping for a crispier texture. I ordered the Zebra Ramen. The noodles were cooked perfectly al dente, but the broth was much saltier than I would have preferred. The pat of butter felt unnecessary and made the broth overly rich without adding much depth. The chashu was on the small side and also quite fatty and I assume it's the same as the appetizer but was sliced instead of in large chunks. The marinated egg had good flavor, although the yolk was a little more cooked than I typically like. Another thing is the pork belly appetizer came with an egg. I wish the server would tell us so we didn't have to add it to our ramen with an extra charge. The nori was also completely soggy by the time it reached our table. Went here a few weeks ago with friends and finally getting to write my review upon reflection. I loved the variety of vegetarian options that were available. I was NOT a fan of their mushroom friend rice. It was a plain white rice with sauteed mushrooms and corn. That's it. I expected a bit more and fresh ingredients especially for the price. I thought the rice would be at least been fried? I asked for some soy sauce and spice just to add a bit more flavor to it. However, our service was great and I cannot say enough kind words to the staff. The rest of our company enjoyed their food. I was in the city, and wanted a quick bite to eat, so I dropped by EAK Ramen. It was not crowded, and I was able to get served within 10 minutes. The tables, floors, and bathrooms were all very clean. This will be short and sweet. I ordered the Shrimp Bao. It was very good. The shrimp was crispy and tasty, but I think there should be 2 per order. One was not enough. 5/5 for taste 1/5 for quantity. I also ordered the Oh So Hot ! Miso. This consisted of pork and chicken broth, spicy ground chicken, spinach, bean sprouts, cabbage, and nori. I ordered it spicy, but I should have gotten it hot instead. EAK Delicious ramen!! I had the oh so hot miso ramen and I polished it off. The noodles to broth ratio was perfect and the tonktsu was melt in your mouth. My only complaint was that it wasn't spicy enough. I asked for the spiciest level and I felt it could use more chili. However, Japanese food isn't typically spicy so I'm not too cut up. My friends got the yakiniku bowl and the zebra ramen, and were kind enough to let me try a bit for the review. The yakiniku was good, but just your average bowl. I think it could have had more meat for both of my friends to eat. The zebra ramen was also fabulous! I could really taste the butter in it. Located in Hell's Kitchen, this Japanese spot offers a variety of Japanese dishes from sashimi to rice bowls to ramen to other small bites. Service here was fairly quick. We ordered their takoyaki, spicy fried rice, mapo ramen, and their zebra ramen. Everything was pretty good! The takoyaki was crispy and had big pieces of octopus in it (I just wish they also added bonito flakes to the takoyaki), and the spicy fried rice was full of flavor. For a ramen bowl that is named after their restaurant, this ramen is so boring. Their EAK shoyu ramen is Shoyu broth, noodles, seaweed, spinach, and chashu. It is exactly as described on the menu, but I regret investing $17 + tax on this basic bowl that represents their restaurant by name. I feel confident that I can find more in a ramen for the same price. In my craving for ramen, this review is to remind me that I will not be coming back. EAK is conveniently tucked inside Moynihan Train Hall, which makes it an easy stop if you're passing through or killing time before a train. I've been here twice now, and both visits were... fine. The first time, I ordered ramen. It wasn't bad, but something about the noodles felt a little off... texture-wise, they didn't quite hit the springy, satisfying bite I expect from good ramen. This time around, I went with the chicken curry instead. The flavor was decent, but the chicken katsu came out uncut, which made it awkward to eat with the provided plastic utensils and chopsticks. It's a small thing, but it matters, especially in a busy transit setting. That said, the staff deserve credit. Everyone was cool, chill, and efficient. E.A.K is the best Ramen hands down. This area has many options but for some reason the aesthetic of this place caught my eye. It was packed with people and we still decided to wait just cause I was really in the mood for ramen. The minute we were seated I had to take a photo because I felt the place was so beautifully detailed that it made me feel comfortable just being there. I wish I would've asked our server for her name cause she was so friendly and made the best recommendations. The first ramen we ordered was the spicy (mild) which was delicious. Full of flavor and literally the best egg I have ever had in my life (no joke). Noodles were perfect, not too big or too thin. The food was so good that we went ahead and ordered a third bowl of soup which I didn't even think we could fit but it was soooooo worth it and we definitely ate it the next day. EAK Ramen was super good! I love Shoyu ramen the most, and theirs lived up to my own standards. I like a cloudy, flavorful broth, and not all Shoyu ramen has that, but EAK did! I could already tell that this restaurant must be good because I could hear 2 tables away from me speaking in full on conversation in Japanese. I stumbled across this place because a friend randomly wanted ramen (and who am I to say no to ramen?). E.A.K. has NEVER come up on my ramen radar. We just Googled what was in the area and found it. So I was surprised at how good it was! Other than that, service was SUPER FAST and friendly. We all got the Zebra ramen, and they for sure put a little square of butter right in the center of the bowl. I loved that it did not come with extras like bean sprouts or scallions (which I normally OMIT), but seaweed and spinach, which was quite welcome. Also, the noodles are fat, but I liked the added texture. It was quite hearty and, having come from Rudy's and all their free hot dogs, I couldn't finish and had to take home my leftovers. While the noodles did absorb most of the broth by the next day, they were still SUPER tasty and flavorful. I definitely would come here again, and would choose them over nearby Kyuramen for sure. This is our third visit to E.A.K, This time we went with the kids, after a Broadway show. If I were to rate the place on the Ramen only, it would have been an easy 5-star review, as it's great! This is Hokkaido-style ramen, so the noodles are slightly thicker and chewier than usual. The broths are delicious, and the add-ons are great. The menu accommodates most common dietary restrictions (vegetarian, vegan, dairy-free, nut-free) and the ramen is very good, if not memorable. I appreciated that the veggie ramen options weren't afterthoughts - so many ramen spots don't offer a veg option or have a random assortment of vegetables thrown in a bowl with a thin broth. The mushroom ramen at EAK was very salty and not very rich, but had a great assortment of shrooms and really excellent noodles. The bowl didn't have the signature sheet of nori, and would benefit from an egg or green veg/seaweed to balance out the mushrooms. Prices are decent for the area at roughly $20 per bowl, $10ish for appetizers. Reservations are available and recommended for groups more than 2 between 6 and 7:30pm, though most people just walk in. read more

Yelp played a major role in steering us to E.A.K. Ramen, a real find in Hell's Kitchen. This restaurant is the US version of a Japanese import called Machida Shoten. We ordered the stir-fried eggplant ($9) to start, and I went with the zebra shio ramen ($18) as my main. According to the menu, it's one of their signature ramen options with thick noodles in Yokohama-style pork and chicken broth with shio tare. The zebra shio ramen also included chashu, spinach, butter, nori, and garlic oil; you could also order more toppings such as eggs and green onions for $1-3 each. Everything was fantastic. Home style (家系). One thing you learn quickly in linguistics is that nuances are lost when you take things too literally. Take the Japanese term iekei (E.A.K. is a phonetic crutch). At the simplest it implies "home" or "house" style noodles, while in actuality it's the opposite, a labor intensive style in Japanese ramen definitely not done at home. Ramen use a combination of broths, seasonings, tare (a finalizing flavor booster - salt, miso or soy sauce based, with various fats included), and various styles of noodles (thin or thick, wavy or straight, etc) to inform a geographically distinct style. Hataka (Western) prefers a milky pork bone broth with thin chewy noodles, Sapporo (Northern) likes miso broth with seafood toppings, while Tokyo style (Eastern) is a shoyu-dashi based chicken broth with thin curly noodles. Iekei is a Yokohama hybrid between Hataka and Tokyo style using a mixture of pork bone broth and shoyu-dashi chicken (double the soup making), thick straight noodles and served with a massive dose of chicken fat, tare and raw garlic as garnish. It was invented in the late 70s by a long distance trucker named Yoshimura Minoru 吉村実 at his Yoshimura-ya 吉村家 ramen shops in Yokohama, and the style spread through his direct disciples and various knockoffs. The banner at his store is famous for the saying お客様は我が味の師なり (okyakusama wa waga aji no shinsari), "our customers teaches us our flavors" - or as Mr. Yoshimura puts it - his background is in driving a truck and not ramen, it's his customers who tells him how to tune his taste to perfection over the years. Iekei shops (usually family owned) have names ending in the kanji 家, which means home or house (i.e. 黄金家 or literally golden house). This can be pronounced ie (classical Chinese, Kogane-ie) or ya (modern Japanese, Kogane-ya). Since they are serving Japanese style Chinese from people who had some Chinese heritage, "ie" became a mnemonic marker - yeah, "home" style this is and isn't. The rich, fatty style started as cheap kibble to feed laborers - In most eateries steamed rice is complementary or sold cheaper so you can dunk it into leftover soup for your money's worth, like a salty risotto bomb chaser. Machida Shoten is a large corporate chain with 300+ locations in Japan - there are better known competitors like tenkaippin (天下一品, 230), ichiran (一蘭, 90-ish) and Ippudo (一風堂, 140) but it's a newcomer with only 15 years of history. it's decidedly "kinda corporate" and beneath the sleek exterior, you see some signs of costcutting neglect like tape stuck on walls, cracked lexan displays and a wet dingy restroom. How was the food? It's solid - the dumplings were done Hanetsuki style (with crispy "wings" typically done in Southeastern Tokyo joints) but the gyozas themselves were a bit soggy. The takoyakis were okay - me and the missus can't figure out if it's fresh or pre-made frozen (probably the latter). As for the ramen, I was constantly reminded of the smell of "something like truffle oil" (not a fan) and trying to figure out if it's that or garlic oil. The soup does taste a bit like a hybrid but with some of the pork funk rounded out. Unlike 99% of the ramen this was not served with the typical soft boiled jammy egg (2 dollar extra for the past 6 years and not a 2025 bird flu thing, although their Japanese stores do have them) - it also does not have the memma (bamboo shoots) or Kamaboko (fish cake) but rather spinach and really tender char-siu...which is within their style. Flavor-wise it's rich but not too ridiculously so, and the noodles were on the firm side but works well with the broth. Overall, decent for an 18 dollar bowl and is arguably better than Ippudo's midtown location (also on 46th but within Little Brazil), and less nonsense than Ichiran's times square location. That being said, if you want more personality from your ramen shop, head 2 more blocks up on 9th and go to Kohoku-ku instead - they actually claim Yokohama lineage and have a hell of a decor...not sure about the food there though... read more
