Then she went and put the Oreo gluten donut on top of the macarons after I just told her my kid had an allergy. The donuts were really good, soft, chewy... we got the churro and Oreo flavor. Would order again. Just be cautious of allergies. And don't expect it to be safe.

However, I love the decoration, the customer service and the extensive menu, which is the reason for the 4 stars. I originally stopped by to eye the menu and plan my post-lunch coffee-time dessert. I let the barista know that I'll be returning but will order something simple. She suggested the cortado and I said yes immediately, and asked for iced. It was perfectly strong and not watered down. Fast forward a few hours, I returned as promised and she remembered me. We decided to order 2 mochi donuts and a few drinks: -chocolate and cinnamon/sugar donuts -red velvet latte -hazelnut latte -regular latte One thing to note is that she couldn't really describe the drinks. For example, I asked her if the red velvet latte tastes like chocolate or just sugary (since it's basically red-dyed chocolate) and she had no idea. I asked her what are the top drinks (besides what was shown on the board) and she couldn't answer that. But she was friendly. The donuts tasted a little stale and the chocolate frosting was definitely a little too hard. The cinnamon toast crunch was a cute touch to the donut, but again was stale. I wasn't a fan of the red velvet latte, it was pure sugar and aside from the intense pink color didn't taste the way I expected a red velvet cake to taste (most likely because the cream cheese is important to the flavor). The decoration and swag for purchase are all show-stoppers, perfect for photo ops or even social media. They have a cute little photo booth inside as well. There is plenty of seating available. I can't say that I'd return as I'm not a big mall person and wasn't too terribly impressed with the donuts.

Most recently we had them make our elopement cake. Which was phenomenal! I couldn't thank them enough for making our day just a little more special. Keep in mind, they don't have a storefront. The mango cream pastry has changed so much (changes in bread, cream to fruit ratio, etc.), and while I still really enjoy it, I definitely preferred the older iteration more. Compared to other bakeries nearby, the vibe is much more chill and less noisy. It's a very simple and clean space and a good spot to do work. I recommend them highly!

It's interesting to me that people seem to either love or hate their food. I suspect that…read morecustomers with negative reviews are comparing them to traditional bakeries while those with positive reviews have had other gluten-free options. For a gluten-free bakery, they are excellent! Gluten-free baked goods do taste a little different. Gluten provides structure, elasticity, and rise in traditional baked goods. So, of course - things will be a little more dense, a little less chewy, and a little more dry. If you compare the Difference Baker to other GF foods, the vast majority of their things are great. A few are a misses... or just not hitting the spot for us, but most are pretty darn good. For example, my daughter notes that the chocolate donut is a little odd as it's almost like the donut and the glaze are two different types of chocolate. But the other flavors don't have that issue. We've tried pretty much everything. The waffle is my daughter's favorite. I prefer the oatmeal pies. I would steer clear of toasting their bagels (unless you are planning a very moist topping) as it amplifies the dry factor. Initially, I gave them three stars due to Customer Service issues with the GMU starship application. Basically, our order was consistently being filled incorrectly but it was easy to see why their menu lead to the mix-ups. FWIW, their staff reached out to me and tried to fix it. One problem is corrected - one isn't... but they tried so I'll give them credit for that. Most businesses aren't that responsive. Finally, I will say the pricing is a little high per item but gluten-free foods are expensive. Also, I suspect GMU rent is on the high-end. If you stock up and get the half-dozen or dozen, the cost per item is considerably lower. We always make a point to buy extra and freeze the left-overs.

I stopped by because I really wanted the Krispy Kreme knock-off. I did end up ordering this (no picture because I ate it before I could take a picture). I have mixed feelings about that donut--I think that I would have enjoyed it more if they HADN'T told me they were trying to make a krispy Kreme donut. The glaze was quite similar to Krispy Kreme donuts, but I was hoping for something with the lightness of a classic yeast donut. For me, that lightness is what making Krispy Kreme donuts so good, but this donut was much more similar to a cake donut. Dense, crunchy, though freshly fried. Not bad! But definitely not Krispy Kreme, which was what I thought I was getting. What I DID love, however, was their pop tart pastry. We got a berry poptart, and it was scrumptious! We ordered the red velvet, cookies and cream, s'mores, triple chocolate, and one other basic cookie. At the time of this review, this is not a sit down venue. Expect no frills when you walk in, but delectable goods in-hand when you walk out! I've been looking for one for years in this area & have finally found it. My favorite bakery. Why? It's not a cool trendy or fancy venue, but the owners take the time to take care of you when you walk in. They're just starting to build their storefront in this industrial/commercial kitchen kinda setting, so please don't expect glam. Also, don't write them off until you've given their cakes a shot. Asian-style. Light fluffy, not too sweet cakes with lots of yummy whipped cream. Fresh & yummy flavors. If you're a heavy buttercream fan, this bakery may not appeal to your palate or texture preferences, but if you enjoy fresh cream cakes....mmmm mmmm goood! Other Asian-style bread items are available and their tofu chips are addicting. They're roasting their own coffee beans, too, which make a really smooth cup of java. Tasty. This mom & pop seem to really love what they do, they work extremely hard every day, and they really want their customers to have a good experience with their products. I love that they're often working on new recipes and creating new products to add to their line-up. This bakery is a must try at least once. And, maybe...just maybe... you'll enjoy their delicious treats as much as I do & be glad you found this off the beaten path local bakery.
