I ended up returning the very next day, and although he wasn't there, the other two staff members working which included Mikaela were absolutely delightful and so kind. The Cakes -Coconut Cake: This slice was so delicious, fluffy, and airy that it instantly reminded me of being a kid at holiday family meals with a fresh coconut cake on the table. -Carrot Cake: It was everything you want a carrot cake to be. It was nice and dense yet soft, with a pleasant texture from the added fruits. Definitely noticed pineapple bits! The cream cheese frosting wasn't overly thick and was so good you could eat it completely by itself. -Strawberry Cupcakes: I stole a small bite of my son's. unfortunately, this one was my least favorite. These cookies are so good that I feel the need to spread the word, and I'm trying to figure out how to find the truck again. Keto diets are extremely low carb* and paleo diets avoid wheat** which makes them lovely companions in many specialty dessert recipes. Almond flour is a great replacement for wheat and is low carb. Add other quality ingredients and you'll end up with a winning concept. Add knowledge and experience and you'll end up with these delicious cookies. We bought two six count bags. Chocolate chip (2.9 net carbs per cookie) and iced lemon (.9 net carbs per cookie!) which cost $10 each. This is when I realized how important it is to have someone nearby to help you share the bag, because without a partner your brain will tell you to eat all of the cookies in one sitting. They were delicious! Three of us shared the treats, which are sweetened with monk fruit and are soft and crumbly but which did not fall apart in the bag on the way home. The lemon cookie was our favorite. Almond flour was an unexpectedly perfect pairing with lemon, and the final product was almost cake like in texture. My diabetic mother was happy that she got to have more than one at a time, and we were all so sad when the cookies were gone. They had many mouthwatering options on their website, however we decided on their strawberries and cream option and instead of the perseveres filling we opted for the "sorbet" option. The look: check, the cake: check, the sorbet: check, but the cream cheese filling is going to be a no forme. I'm not sure if the cream cheese filling had too much lemon juice or cream of tartar (to stabilize it) but it was definitely giving sour. As everything else was so great I would definitely consider coming back again to try their other options (4/5). FYI: they offer pickup and delivery (this starts at $20)
