Barbecue brisket, ribs, good Mexican food, pan dulcé - all of these I've been craving. Well, high on that list is smoked barbacoa. And, to make that, you need "cachete de res" - aka, beef cheeks. So, for 3+ years I looked and looked around here and FINALLY found a source. River's Edge Ranch offers all kinds of great quality meats; beef, lamb, goat, poultry.... and sausages made from their meats. They also have other products from the tallow and suet of their livestock. You can find soaps, lotions, even beard oil! So, when I contacted them about acquiring some beef cheeks, they quickly responded and got me set up. The 3 packages of cheeks I bought were wrapped, frozen and ready for me. The whole purchase process straight-from-the-source was about as easy as it could be. The cheeks I opened were perfect! They were expertly trimmed already, with very little sinew left to remove. I couldn't be happier. The price is only slightly higher than what I would've expected to pay, but I'd gladly pay it again for this level of quality. I can't wait to try some of their other goods!

When dropping off my animals for butcher he was so angry I thought there was a problem. There wasn't. it was just his normal mood (pissed off). I say avoid this place and use a much friendlier Woods in Sandpoint. Half the price and 10x the friendlier nature. Not an AD for Woods just a suggestion. You have been warned!

The prices are still rather high, but most people will go there for the meat counter b anyway. The ambience well you know it's neighborhood market would you expect? Last time, they shorted us our flank steak. This year, they took over a month to cut 1 cow. Any time you ask them why things are not correct, they deny blame and say it's not their fault. The guy answering the phone is apathetic at best and is not willing to work with you in the slightest. After using them for over 15 years, we are done and never going back.
