You have to keep your eyes peeled for this food truck located just off to the side of Highway 95…read moreotherwise you might wind up skidding into a culvert trying to make the turn. The good news is that it's worth seeking this place out which sits a mile north of Holland. I was surprised to see a three meat plate with two sides for just $22, I expected it to be more. I actually got there after 4 PM and they still had plenty to choose from. Needless to say, I had to try the trifecta of ribs, brisket, and sausage. After he ran my card, I was expecting the tip screen, but that didn't happen so just toss a few bucks in the tip jar. There is some covered seating outside, but it's best to get it to go in the summertime. The menus are posted on the outside of the truck and the prices are very reasonable. The brisket had a decent smoke ring and was unbelievably moist. The ribs were fall off the bone smoky good and the sausage was firm, but not spicy. The sides were good and the coleslaw had a nice vinegar character with a touch of sweetness. The side of beans had onions and brisket mixed in and were really good, although a pretty small helping. The barbecue sauce is a little pudding-like that has a decent amount of vinegar to counteract the sweetness. It is good 4 1/2 star barbecue, but the price puts it in the five star range. It's definitely worth seeking out if you find yourself in this neck of the woods.

The food is very very good and the service is amazing. The brisket tacos are a must here. They…read moreaccept cash and card and lots of parking even for Truckers.

When passing through the town of Holland, be sure to keep an eye out for this little red trailer,…read moresituated on a corner next to a tree, Mudder N Son's Slop Wagon surprised me with how good their food is. They've given the word "slop" another meaning - - quality good food! I've been here at least 3x now, and I keep running into the same people who are in the same boat as I am - - they keep coming back for more. I first tried the fried fish w/ fries - - it was awesome and so tasty. I usually steer clear of fried foods but there's no way I can stay away from their fried fish - - it's not greasy and tastes great. I haven't had fried fish this good in a while. My next visit I tried the Philly Cheesesteak - OMG - awesome! Shelly (she's one of the Sous Chef's there who makes the magic happen) made the philly Texas-style - using tortillas and grilling them. Wow - it was awesome food on the go! She put tons of cheese and onions (no skimping here!) and adds in jalapenos per request. I could not finish it all, it was the best thing I've had on a tortilla since I could remember! And then - the ribs! OMG - they were so damn good! I bought their rib plate, had a bite of the ribs, they were so smokey good and fall-off-the-bone that I ended up buying more ribs to take home. Shelly and her Pitmaster (Jeremy) knows what to do here - - I was very impressed. Jeremy is becoming a social network guru - - he's working on building up their Facebook page and will eventually be on Twitter as well. They have really good burgers here - that's next on the list. Ribs aren't offered everyday (may have to check their Facebook page or call ahead) but the Philly, Quesadillas, Burgers, and Fish & Fries are staples on the menu. Shelly said they'll be open for lunch on Tuesdays through Fridays from 11-3pm, and on Friday evenings they do a dinner shift from 5-8pm. It's the best damn slop I've every had!

Cousin's Maine Lobster Truck is a weird experience…read more It was fun to do once. I am probably not going to follow the truck from town to town so I never miss a single chance to get a lobster roll. * * * Cousin's Maine Lobster is a franchise of very very mobile trucks that sell lobster rolls. They also sell other lobster-on-top-of-stuff dishes. Their gimmick which I am not sure is a plus is to have no fixed location. They publish a list of places where the truck will be every week - generally one location for lunch and the other location for dinner. The Central Texas Truck could be anywhere from Georgetown to San Antonio. You can't just go there when you want unless you are willing to drive from Austin to San Antonio or San Antonio to Georgetown to get your lobster roll. * * * One consequence of being eternally mobile is that the truck has no regular or guaranteed access to a bathroom. You go to a brick and mortar restaurant - and the health code will require that that restaurant have a bathroom. Most food courts have some sort of bathroom - either one owned by the food court or one in a gas station or convenience store near the food court. Cousin's has nothing. So you not only have to plan ahead for when the truck is going to be within driving distance of you ... but you also have to plan to have done all of your personal business BEFORE you go to order from the truck. I do NOT consider this to be a positive feature. * * * There is also the issue of WHERE you eat your lobster preparation once you have received it. You could eat in your car. (For Samuel C that means a guaranteed necessary trip to a car wash.) There was almost no place to sit near where Cousins was located my day which was in the Yuppie complex of apartments near Oracle near Riverside. The park near where the truck was stationed has no park benches. I found ONE bench on the street mercifully provided by an apartment complex. Without that one bench I would have been scroodled. * * * I am from New England and have lots of experience with lobster. My personal opinion is that the way to eat lobster is boiled with a vast quantity of melted butter for dipping. The downside of a lobster roll is that the bread hides the taste of the lobster. This makes your investment in expensive raw materials kind of a waste. Mixing lobster with stronger tasting ingredients - which is what Cousin's does on the dump-ons - allows the stronger tasting ingredients to compensate for the diminished lobster experience. This is the way to go with Cousins. I did a Lobster On Tater Tots With Sauce concept and was not displeased. * * * Lobster should be boiled fresh from the fishing boat and eaten right on the spot. (For a related concept, see corn on the cob.) This is why people go to Maine for lobster and why clambakes with the shellfish just obtained an hour before the clambake make good sense. Shipping your lobster from Maine to Texas isn't terrible since the lobster is in water. Taking the lobster out of the shell and making raw ingredients for your lobster roll or lobster taco has started the clock ticking. As it happens ... The lobster gets old and stronger. This actually turns out to be a plus if you are dumping your lobster on tater tots. Eating old strong fish is an institution in Korean cooking. They like mackerel and other potent fish that pack a pow ... And aging the fish provides a taste Koreans really like. With lobster, aging gives you an ingredient that can stand up to being mixed with other ingredients. * * * This is all well and good. But it is not fresh lobster straight off the boat boiled and served in its natural goodness with only melted butter for a garnish. Some regional foods just don't travel.

I am frustrated. I called two times wirh no answer or return call. I sent 3 (now) messages. I had…read morequestions before I drove 25 miles to your food truck. I thought I could get 15% off at the food truck. Your emoloyee said no. I asked her how much lobster do you get in the lobster bisque She said one ounce of lobster is in a 32 ounce (one 32 ounce container costs $35) before taxes. I said thank you and left without purchasing anything. She told me if I wanted more lobster it would be $8. I then drove 25 miles home.
