It's a very casual & rustic ambiance. I opted for the brisket sandwich while hubby craved the smoked turkey sandwich. The sides chosen were the creamed corn and potato salad. Our entire order was packed in one of those hefty dishwashing trays. Very clever. Staff were friendly and food came out quickly. We totally savored all the food. The brisket was just as tasty & tender as I remembered and hubby's smoked turkey had his tastebuds singing! Hands down the best creamed corn anywhere and their potato salad was excellent, too. Let's not forget their "sauce!" Everything was so flavorsome. Since we had leftover potato salad & creamed corn, we ordered BBQ sausage to go for dinner at the hotel later that evening. I heard the braised cabbage is good so I gave it a try and I loved it, I would eat pounds of that stuff. The brisket was very good with the right amount of tenderness and flavor without being overcooked. The Mac and cheese was interesting because it had loads of spices but it was also great, I definitely appreciated the spin on it more than regular mac n cheese. I was staying near Waco for a few days, but the area I was in had very limited choices for food. So, I looked up some nearby restaurants in Waco, and found Cajun Craft. From the outside, it doesn't look like much: small parking lot, rusted roof, etc. However, I have found that often conceals some of the best places. An immediate friendly greeting was offered at the door and I was surprised by the quaint setting. There were only a few tables near the bar, but there was a covered patio attached and even more seating outside. The menu offered most of the traditional Cajun dishes at a modest price, but I already knew what I wanted. I ordered the Atchafalaya Catfish, a catfish filet over a bed of rice smothered in crawfish Étouffée. It was amazing. The Étouffée was rich and hearty, with the perfect spice level, maybe the best I have had west of Baton Rouge. The catfish was crisp and golden, giving a great balance to the creamy Étouffée. If you are ever in the Waco area and have a craving for some authentic Cajun cuisine, you must give Cajun Crafts a visit.

Overall it seemed like a location that would be bumping in conjunction with Baylor college nights, post church service, or otherwise Waco-oriented affairs. My only complaint was really the smell. We came near close when some workers were cleaning, however there was an apparent chemical stench within the patio, between the inside seating and outdoor seating. My partner ordered the sausage po boy, while I ordered the fried chicken plate, wish mashed potatoes & gravy + green beans. The wait was rather long, which can be attributed towards the chicken's cook time - which might be front scratch. After we got our plates, I certainly couldn't complain. The chicken was decently sized and decadent with flavor. Consistent, strong Cajun spicing littered the tray and chicken, while its interior was extremely juicy and filled with flavor; additionally, it still maintained structure and provided a nice crunch on the surface. The mashed potatoes were equally as enjoyable. The gravy complemented the potatoes well, and established an equilibrium through texture. The green beans however, were not my favorite. They initially appeared fine on the surface, but became watered down and lacking in flavor the farther down the bowl you went. I would not be surprised if these beans were canned. I would certainly find myself eating here again. Its biggest appeals are the prices, genuine quality of food, and disposition. It is not perfect, but it is more than satisfactory. If you cannot get over the minor inconveniences that you may run into here, then you probably shouldn't be eating Cajun anyways.
