We booked CV BBQ for their catering service for a birthday trip in Indio and I have to say the barbecue is phenomenal even compared to places in Orange County and Los Angeles (which I KNOW it isn't saying much but I had barbecue in Alabama... and was not impressed. Texas is yet to be discovered haha). CV BBQ was in a little plaza and the parking lot looked... suspicious to say the least, but once you walk into those doors, the smell if bbq was just amazing. The staff is also super friendly and are very thorough with checking the order so we got everything correctly. I could have guessed that they were really nice based on the communications via email that I had with them. I was super difficult with the requests and asked if they could do half portion of sides, etc and they accommodated everything... except the pork ribs. They don't know they they're getting them in so unless you're ordering a ton, they can't put that in your order. The standouts were the pork ribs and the tri tip. Yay! I didn't know about many barbecue spots in the Coachella valley but CV BBQ seems to fit the bill. There's tri-tip and pulled pork. I had to do a double take when they suggested the Marf. The what? Oh, with an M. I must have misheard. It's a tri tip sandwich with mac and cheese. A little sloppy but good, and the deviled egg potato salad was great as well. Hard to find, a bit out of the way from Palm Desert, but well worth it. I'm used to brisket, but the tri-tip is excellent. A little leaner than brisket, but not in a bad way. Pulled pork is also well done, and using Linguiça sausage is genius. I've been putting them in my Brazilian Black Beans for years. But really, it's all about the sides. Macaroni & Cheese is thick and cheesy, with a sharp white cheddar taste. Beans are amazing, reminding me of my fathers Boston Baked Beans. Dark heavy molasses taste here. I dealt with the owner Sean and he couldn't have been more helpful, accommodating, and professional.
