I've never had grouper cheeks before, so I can't compare them to anything else, but these were amazing marinated in lemon, butter, and garlic, then sauteed with onions and finished with butter. The rock shrimp were very good, but lacked a little finesse in the cleaning. The rainbow trout were perfectly deboned, and had a mild but full trout flavor.
