Are there drink concepts are amazing. Unique hands-down. If this was a Bar would easily be five stars. But because this is considered a restaurant and has food to offer, I think the food is blend compared to how unique they crafter beverages, as well as a bit overpriced, considering how blah the food is read more

We put our name in and the host quoted 45 minutes until a table was ready. About 2 and a half hours later we finally got a call, at which point we were already at another restaurant. While we didn't sit down, the ambiance was cool and the drinks looked great read more

We were frequent fliers to conspiracy pre-covid. This place was JUMPIN and had a great vibe! We have attempted to come here at least 2 times since 2019 and have left disappointed each time. The first time we tried to come since 2019, they gave us a seat only to tell us 5 minutes later that they couldn't serve us because they were closing. We were there an hour before they were supposed to close. The bartenders have seemed inexperienced and unknowledgeable. We were the ONLY customers at the bar. I can't imagine what the wait would be like had the place been busy. We waited at least 10 minutes to order our drink after being seated. Going with 3 stars based on potential and the quality of drinks. I hope this place can turn it around to what it was a couple years ago because it was one of my favorites. read more

So excited to find an official craft cocktail spot. Definitely a throwback to the prohibition era. A menu filed with cocktails made with a range of liquors. We ordered the old fashioned campfire made with smoked local maple syrup and topped with a roasted marshmallow. The charcuterie selection was top notch too. This is a must try now! read more

Overpriced and the food is served in a brown paper bag? There is also no tv? Part of the vibe? The chai drink was good tho. That is why i scored it a two. read more

The food is a bit overpriced and very small portions for what you get. The best thing we had were the arepas, th drinks were okay. Kind of off flavor combos. read more

The food is so yummy!! The atmosphere is so calm and comfy. Drinks and service is absolutely phenomenal. Highly recommend checking this place out. It is definitely a hidden gem. read more

TERRIBLE TERRIBLE MANAGER! she is god awful! terrible service from her ONLY! which is ridiculous bc SHE SHOULD LEAD BY EXAMPLE!! i went with friends for hh on a wednesday and the manager did not address us even after i said HI first! the bartender was a girl and the chef that was on left of the bar near the window they were VERY SWEET and super nice and outgoing. they smiled at us and we're social. they had no problem with us which why i was surprised how rude the manager was that day. i would give the chef and bartender (girl) a five star. however, since the owned damn manager couldn't get they're ish together , i HAVE to leave a bad review. i really hope she reads this because her service impacts people experiences. not only did i feel this way but my friends did too. i was not going to let her ruin my time with hanging with people but man was i itching to write this post. i feel sorry whoever has to work with her. i even said god bless you when she sneezed WITH HER MASK OFF and she didn't even say thank you. now that i know what i'll be expecting coming here, i would go to higher management to let them know this isn't her forte. she should erased whatever she had on her resume cause customer service isnt one of them. thank you yelp so i can express how i feel and how horrible my experience was. read more

I came to conspiracy with family on Christmas Eve for their waffles and cocktails breakfast. The waffles were out of this world! My favorite was the peppermint cheesecake, but the hollandaise hash brown was a close second. The egg nog was the best I ever had. Our server Jared was very informative and attentive. I was told about the new winter drink menu and I can't wait to come back and try them. I never knew there was such an amazing cocktail bar in Middletown. I love the whole speakeasy feel. read more

Amazing drinks & cheese plates in a gorgeous setting. Loved the Old Kentucky Home, Trinidad Sour & Campfire Old Fashioned read more

Very very cool atmosphere. Drinks were creative and delicious! Food was wonderful! We were seated at a small low table in two club chairs which made for a swanky vibe but difficult for eating an actual meal. Nice jazz trio playing that wasn't too loud! Overall really nice experience. I will def be back! read more

Love the concept and design of this place. Reminds me of some of the speakeasy's in Manhattan. Giving it a four star because the service wasn't that great the night we went and the waitresses seemed overwhelmed. Not to mention it was wicked dark inside you can barely see the menu. read more

I went to Conspiracy about a week after it opened to have a couple drinks and meet a friend for food. Everything we were served was spectacular! My cheese board was delightful, and the locally made jams and mustards served alongside were a great pairing. I got the meat-and-cheese choose 5 board and it was definitely enough to fill me up as a dinner, the pate was amazing and the cheese great. My friend had the arepas and they were also very good. My first drink was one of the fall-themed whiskey cocktails on the menu, and it was well-balanced and went down easy, then stayed on theme and had the campfire old fashioned - the flaming marshmallow is a nice touch. For my last drink, I chatted with the bartender and asked her to make me something balanced and maybe a little sour with gin and she combined lemon juice, gin, a liqeur and some of their house-made bitters to make a really delightful custom drink for me. My friend isn't a big drinker aside from wine and was nervous about how strong the menu cocktails looked, so the bartender also made a custom drink for her, a little sweeter than the more traditional cocktails on the menu. It was great, and I really appreciated the bartender's willingness and ability to take a couple key words on flavor and make things we liked. The bar is also beautiful, and the speakeasy style entrance was a nice touch. I'd recommend this to anyone looking to get a good drink in middletown. read more

LOUSY. A 2 oz drink served in a mini tea cup for $12!!!!! Are you freakin kidding me?!?! And we waited 10 minutes and no one came to take our order. We had to go to the bar and tell her we were there. Lighting was made for making out. Couldn't even read the menu which was brunch only at 6pm on Sunday night. SERIOUSLY?!?! LOL. NEVER EVER AGAIN. What a joke. read more

Awesome bar! Great decor and the drinks are really something special. If you're a cocktail enthusiast this is your spot!

I've been to conspiracy a few times in the last few years, but it was my most recent visit on 10/14 that really blew me away! We got some cozy seats at the bar and we loved the deck of cards menu. The cocktails were divine with a great price to match. You've won us over for sure! read more

Nice place for drinks, but the food menu is very limited. The food also took a long time to prepare which made it difficult to continue to drink. I suggest expanding your kitchen ability. read more

I'm bucking the trend of reviews for Conspiracy that alternate from 1 Star because it took 20 minutes to get a drink to 5 Stars for how wonderful the food/drinks are. Conspiracy is a mess - literally. We at at the bar, which is just littered with crap that should be out away. I had a pint of Angustura bitters right in front of me sharing space with my drink. The wall is lined with liquor and wine bottles to the ceiling, but the shelves are swaybacked and ready to let go. The 'kitchen' is separated from the bar by cheap wire racks, again stacked to the top and ready to come down..... so it's really not separated at all. It's just dirty, messy, unkempt, dark, and the materials are cheap. In the brightness of day? I can only speculate. Okay, the bar stools were pretty comfy, I'll allow that, but the bar space in front of you is doubling as work space for the bartenders - and that's just not right. Are they trying to put too much in too little real estate? Conspiracy should have space for the bartender's stuff and space for the patrons. The place just seems dangerous and we both almost immediately wondered how we would get out if there was a fire and wagered it would be tough to make it down the one narrow stairwell. As others have noted, service can be a bit slow but I blame it on an overly ambituous cocktail menu that slows down every drink order. The food was okay, I had the emu/smoked mozzerella flatbread and she had the short rib. The flatbread was bordering on the 'tepid' range of the temperature scale when delivered but the beef was on point. Prices were on par with most others in the area.... I just can't get out of my head that I was drinking/dining in someone's converted attic. Won't be back..... read more

This was our first visit to conspiracy and this place exceeded our expectations. An awesome ambience to begin with, the cocktails and small plates were to the point. For tapas we had the mushrooms, short ribs, chorizo, fava toast and popcorn. for cocktails we had the old fashioned, Flight Zombie, scoty, sapphire isles. All I can say that it was an amazing tasting and drinking experience. Hence the 5 stars!!! Please have a visit. Their customer service is outstanding as well!! read more

Interesting new design for a bar.. I wouldn't come here if your hungry but they have chartreuse boards with a variety of different chesses and cured meats. I also saw a few different kinds of grill chesses that looked interesting. The service is what I would describe as casual, they take their time and everyone was pleasant.. I had a few Manhattan's they were all made well but the pours are conservative.. They have a large selection of bitters and absinthe which was nice addition. I find the seating at the tables a little awkward the bar area looked very cool I liked the design and color choices.. I may go back someday but not likely.. read more

Prettiest nicest bartender around she makes great drinks and has immaculate taste in music

Cool place, good drinks, good staff. Can't go back unless they fix the lack of an exhaust in kitchen. Left last night reeking of fried food, repulsive to those around us elsewhere. Wouldn't bring our coats in the house so they could air out. Unfortunate because the place is otherwise great. read more

The already wonderful bar Conspiracy has just added an impressive food dimension to the menu. Three of us had a 3 hour Tour de Force two nights ago. We began with the pickles, sweet potato Okonomiyaki and the pork and mushroom Bao. These appetizers got us off to a great start with our mixed drinks ( which were fabulous). Really excited to see ramen on the menu. We had the mushroom shoyu and the spicy miso. Best ramen we have ever had outside of Japan. For dessert the ice cream sandwich was incredible. An absolutely fabulous addition to Middletown CT. NOT to be missed ! read more

This place is awesome. Staff is super friendly, the cocktails are original, creative and delicious and the food is actually very good for a bar. Love this little spot on any day of the week read more

Went to Conspiracy to meet friends for a birthday celebration. We had a table outside (due to Corona) and appreciated the QR codes on the tables for the food and drink menu. Having recently given up drinking, I was concerned that I wasn't going to enjoy myself. I was wrong. I asked the server if the bartender could surprise me - gave him a sense of the cocktails I liked when I was drinking - and let them take it from there. What I got back was a delicious pear shrub drink - I couldn't tell you more than that other than to say that I was happy to order it again (twice more) and loved it. Thank you Conspiracy! My friends were drinking and their cocktails looked amazing - everyone happily ordered two more rounds. Clearly we needed to eat - the bag of sliders was clutch as were the sweet potato fries. To my sober friends wondering if Conspiracy will be too awkward for you - it isn't. Go and let the genius mixologists concoct something for you - you won't regret it. Oh...and get the bag of sliders. The only reason for four stars rather than five is that we found the service rather slow. It was ok when we all got our drinks and were happily chatting and laughing - but it was slightly maddening at the beginning when some of us had drinks and others didn't. read more

Went on a Friday night and it was a full house. There was no seating available but a reservation cancelled right before we were going to leave so we were able to sit. The atmosphere was great. One half was a bar and the other a lounge/dining area. The drinks were also very good and, while we didn't order food, the menu seemed interesting. My only problem with Conspiracy was that the service was poor. It took 30 minutes to get our drinks and I was never approached after. They took my drink but didn't even wait long enough for me to ask for another so I didn't even bother. All in all, a great atmosphere but I would only go back at a slower time to give the service another chance. read more

I came here and there was a decent amount of people. My friend and I wanted a bottled beer and a draft beer respectively. We waited 20+ minutes because there was a "big order" in front of us. It takes 60 seconds to pour a beer. There is no sense of urgency to get people their drinks in a decent amount of time. read more

I was so psyched when this place opened and they totally lived up to my imagination. They have an amazing creative rotating selection of inspired delicious cocktails. Each drink is made with care and attention. I love the decor as well. My only regret is that sometimes it's too crowded but I guess that's because they are so good they attract a crowd! read more

*Update* because my Valentine's Day night server was wonderful... she was super helpful, pleasant and charming all at the same time... and she kinda has a nice voice. I actually completely forgot they were serving more food, so I was waiting for take out while having a drink. They need to heavily promo that on SM so people are aware. Also, happy to see their logo / name on more things such as menus... I believe they didn't do that in the beginning... Still loving on it, the vibe and the beauty of it. I think promo - ing it out to different target groups of people would make it a more lively and interesting crowd. As of now it never seems to be the place to meet anyone single or cuties. Looking forward to when that day will be... read more

Now this is a fun little spot in Middletown, kinda reminds me of a speak easy. It's very chill inside, with great drinks, and even better bar bites to eat - I've been back several times and really hope this place sticks, because little spots like this are always the best! read more

What a lovely place. This place is for the more mature crowd in the area. I was in town for a birthday party around the block at some other place. We ended up here afterwards. The campfire old fashion, was extremely sweet but such a treat for an after dinner cocktail. I think a piece of spicy candied bacon along with the fire roasted marshmallow would take it to the next level. I would definitely come back. The staff is very nice and very knowledgeable. read more

By far one of my most favorite bars on Main Street in Middletown! It is unlike anything else on the strip, it's a little bit slower paced, but the cozy atmosphere definitely pairs well with the service. The bartender Charlie is 100!! My mother and I went on one Monday night {for a spritz}, she decided she wanted a sangria instead and he just whipped one right up for her, without a recipe. The owners are very nice and will definitely come up and have a conversation with you. Every time I go, I like to try a new drink to work my way through their menu. Also..if you're there for late night {starting at 9:30} they have AWESOME waffles! You're crazy if you don't come here at least once! read more

My favorite bar! Really interesting craft cocktails and great service. The vibe is great!

Awesome staff, great veggie options and cocktails. Staff followed all covid protocol.

The craft cocktails at conspiracy are outstanding, and the atmosphere is perfect. The food is good, much better than regular bar food, but I have to truthful, if you are in middletown, there are a lot of food choices, some of which are better than others. That being said, you need to try the cocktails at conspiracy! read more

Totally unexpected amazement, Conspiracy is a super cool addition to Middletowns broad dining and drinking options. Waffles til late night? Fancy cocktails to go with them? Sounds like a win to me .. happy hour makes it eve more loveable, solid tap list with local beers along side some killer imports. They haven't been open long and I am sure this all will only get better! read more

Despite some its flaws this is still my favorite bar in Middletown. I love the speak easy setting. The menu changes according to season or events. For now I'm loving their summer tiki menu. Many good options. They can be a bit pretentious with the drinks and using bitters in everything but ultimately it tastes good. Now they have a good happy hour food menu as well. The chef also changed every six month. I really liked the last ramen bar read more

I'll admit, I don't have much of a palate for liquor. That being said, I thank Conspiracy for helping me expand it! I thoroughly enjoyed sipping on a campfire while chatting with friends! Love the ambiance and the knowledgeable and friendly staff! It's a nice night cap treat! read more

I was expecting more from conspiracy. The seating was very uncomfortable, the service left much to be desired, the food/drink aren't good enough to make for it. The drinks are excellent. Very creative albeit small drinks. The fig and pig grilled cheese was really good, the eggplant Sammie was okay and the tacos were alright. The cheeseboard and the campfire old fashioned were the highlights for me (the marshmallow was delicious). But very long periods of waiting to order and for the check. The waiter didn't have any personality and little friendliness. The seating is awful. The 2 seater couches are comfortable for 2 people to sit on together but if you are in a group you must sit on the edge of the couch and not be able to lean back if you want to talk with the rest of the group. And there's 2 small tables each either 3 legs that makes it awkward for putting your feet under the table. Just not a pleasant experience and while the prices were unreasonable, you'll still spend a good chunk of money here read more

Already went back a third time. I'm bringing all my friends and colleagues here and all of them are super impressed with this new space and their menu. If you desire a swanky yet sedate place to kick back and have a nice time chatting with your friends over an amazing cocktail, this space and staff deliver on all fronts.
