After a warm reception and a quick introduction, we quickly split into different teams and I was assigned to the Creamy White Bean and Fennel Casserole station. Everyone pretty much finished the cooking by 12 PM and we were able to enjoy fruits of our labor! *** Menu *** * Roasted Beef Tenderloin and Chicken Stuffed with Mixed Herb Pesto * Arugula Salad with Candied Pine Nuts and Parmesan Dressing * Roasted Broccoli with Pumpkin Seeds, Pecorino and Gremolata * Creamy White Bean and Fennel Casserole * Lemon Souffle Cake with Macerated Mixed Berries Personally I liked arugula salad the best and my least favorite dish was lemon souffle cake (too sweet). I asked if he could fashion a sushi roll making class for 12 people, ages 7 - 80, with both experienced home cooks and total novices, adults, children and teens. Chef was delightful! His organization and preparation of everything needed for the adventure was first rate. Organized, meticulous, friendly, helpful - Chef listened to my requests and made it all happen. We made three difference sushi rolls, and everyone could prepare their rolls as they wished, i.e. lots of avocado rolls for the kids and spicy tuna and salmon for the adults. All the accoutrements were available to individualize as desired. We had a great time and the results, our dinner, were fantastic. Chef couldn't have been nicer or more accommodating. One of the best comments was from my 16 year old granddaughter who remarked, "This was way more fun than I expected!" And the 7 year old was able to make her own rolls with very little help. I also loved the experience of watching Jesus the owner and his chefs making the 2 big paellas , as my paella pans are smaller and -in my experience-it is really tricky to make them so big. Jesus and his team are also extremely organized and efficient. Their process was well thought out, from how the team kept the paellas warm to how they packed the left overs.
