The owner knows us by now, and gives us a friendly greeting. But, even if you aren't a regular, they will treat you as a friend anyway. Feel free to linger after dinner and chat over coffee, wine, or dessert. The table is yours for the evening. It is customary in Valencia to make an evening of it, and they won't bring the bill until you ask for it.
