The kind that you buy in your local safeway's frozen section that comes in a bag and contains baby carrots, cauliflower, and broccoli. and there was no trace of sauce or flavoring. The Gyoza dumplings are clearly steamed and pan-fried fresh for each customer as they are served hot with the varietal textures and colors only achieved when served fresh. The meat and cabbage filling is no less spectacular...but I'm sure some may prefer some different mix. Edamame is not normally something special, but this is a food truck after all...and Fuji is the first I've seen that offers up Edamame and theirs is no less fresh than the Gyoza. For the salad lovers (which I am not...normally), the freshness of the seaweed salad won me over. There are other ramen trucks, but Fuji is making sure they have a broader offering than just one base dish. They clearly take pride in the food and service - even their packaging of orders sets them apart. More like a true restaurant on wheels than your typical food truck. I got lucky one day and got in the line anyway. He had one grilled red snapper left. I ordered the platter, got instructions on the best way to reheat it later and took it home. Look at that! I must say, this was very good. I'm normally not one for sauces over certain meat but, again, I was wrong. They go together perfectly. I loved the plantains too!
