They don't use seed oils, are 100% gluten-free, and don't use no refined sugars (only natural sugars). For sweetness, they use maple sugar, coconut sugar, maple syrup, honey,and monkfruit. They source chocolate products from Soul Chocolate, which uses coconut sugar. I got a small Nutella donut and the jam / pastry cream filled croissant. The pastries and pizzas here are definitely very beautiful and made with care. Unfortunately the ones I chose were very sweet. The textures were perfect though, the donut was fluffy and soft, and the croissant had perfect layers. They also have a good wine selection, fresh pastas, and more Italian prepared foods for sale. I would probably come back to try their pizzas or other savory items.
